The dairy-maid called her the Proud Cow. Another Irish cow has been known to act in a similar manner. So her pride brought Mistress Cow many a whack on the back. Depend on it, if you stand on your dignity, you may often suffer, as she did. In my younger days, I had a companion who used to catch our tutor's cow by the tail, and make her drag him at full speed round and round the field.
But now she began to perceive that her father was to be regarded as a milch cow, and that she was to be the dairy-maid. Her husband at times would become terribly anxious on the subject. On receiving the promise of £3000 he had been elated, but since that he had continually talked of what more her father ought to do for them.
Most suttnly a femail wrote this Dairy; but who this Dairy-maid may be, I, in coarse, can't conjecter: and indeed, common galliantry forbids me to ask. I can only judge of the book itself; which, it appears to me, is clearly trenching upon my ground and favrite subjicks, viz. fashnabble life, as igsibited in the houses of the nobility, gentry, and rile fammly.
She returned just in time to join the others as they quitted the house, on an excursion through its more immediate premises; and the rest of the morning was easily whiled away, in lounging round the kitchen garden, examining the bloom upon its walls, and listening to the gardener's lamentations upon blights, in dawdling through the green-house, where the loss of her favourite plants, unwarily exposed, and nipped by the lingering frost, raised the laughter of Charlotte, and in visiting her poultry-yard, where, in the disappointed hopes of her dairy-maid, by hens forsaking their nests, or being stolen by a fox, or in the rapid decrease of a promising young brood, she found fresh sources of merriment.
It learned from a monk how to use antimony, from a Jesuit how to cure agues, from a friar how to cut for stone, from a soldier how to treat gout, from a sailor how to keep off scurvy, from a postmaster how to sound the Eustachian tube, from a dairy-maid how to prevent small-pox, and from an old market-woman how to catch the itch-insect.
No, wait, I'll come to you " she had called out, when with a stamp of her little feet she had shaken the pleats from her skirt adding when they had all kissed her hand in turn "Yes I am going down to be dairy-maid at Peggy Coston's," at which the bald-headed old fellows, with their hands upraised in protest at so great a sacrilege, bowed to the ground, their fingers on their ruffled shirt-fronts, and the younger ones lifted their furry hats and kept them in the air until she had crossed the gang-plank and Todd and Mammy Henny, and Ben who had come to help, lost their several breaths getting the impatient dogs and baggage aboard and so she sailed away with Uncle George as chaperon, the whole party throwing kisses back and forth.
I smell the fields, and the cows in them. I'd have given anything to be a dairy-maid for half an hour! I used to lie and pant in that stifling air among those stupid people, and wonder why anybody ever left England. Aren't you glad to come back?
Mewing of cats, screeching of owls, barking of dogs, drove the dustman away every time he came sneaking in. The stable-boys heard the horses pant, snort, and kick; to the bailiff it seemed as if sacks were being dragged about the granary; the dairy-maid declared it was precisely like the noise of churning; and the housekeeper heard, plainly enough, a sort of rummaging in the pantry.
But although she had bestowed unusual pains upon the arrangement of her splendid golden hair, and had boxed the ears of a clumsy tirewoman with so much vivacity that her own hand ached perceptibly three hours afterwards, yet the great earl paid no more attention to her than if she had been a Saxon dairy-maid.
"Her rank, do you say?" she cried. "To the mischief with her rank. What's rank to love? A woman is only a woman, whether she calls herself a duchess or a dairy-maid. A woman with any spirit would marry a bank manager, if she loved him. A man's a man. You should n't care that for her rank." "That," was a snap of Mrs. O' Donovan Florence's fingers.
