We were given truffled omelets, wonderful salads of eggs, anchovies, and tunny-fish, ducks with oranges and olives, and other delicacies of the Provencal cuisine prepared by a consummate artist, and those four English cubs termed them all "muck," and clamoured for plain roast mutton and boiled potatoes. It really was a case of casting pearls before swine!

There were a variety of dishes: fish and fowl predominating, an olla-podrida, omelets, and puddings. There was flesh too, some small animals, which I strongly suspected were monkeys. The party were evidently too much interested in talking of affairs of importance to pay much attention to the nature of the provisions set before them.

By the time the two omelets were prepared the whist players were ready to stop and the entire ship's company partook of the rival concoctions and decided the matter in favour of Ossie. "Although," explained Joe, "I'm not saying that Perry's omelet is bad. If he had remembered to put a little salt in it " "I did!" declared Perry resentfully. "You don't know a decent omelet when you see it.

I insist on having a separate one for the fritures of fish, and another for the omelets, used only for that: I'm a very fine and conscientious housekeeper, I'd have you know, and all the while we lived in Bayonne I ran the house because Mother never got used to French housekeeping ways.

I was very hungry, and when M. d'Anquetil, in company with the abbe, re-entered the dining-hall, inviting us to eat a morsel with him, I willingly sat down between Jahel and my dear old tutor. We were afraid of being followed, so after having put away three omelets and a couple of spring chickens we resumed our journey.

If you could have it pretty and well-ordered without too much bother, well and good; but might the Lord protect him from everlastingly making omelets to look at and not to eat.

Make the same as a plain omelet. This is one of the most delicious of all the luncheon dishes. Put two tablespoonfuls of butter, a pound of mushrooms, sliced, a half cup of milk and a teaspoonful of salt into a saucepan. Cover and cook slowly for twenty minutes. Make two six-egg omelets. Turn them, side by side, on a large heated platter, pour over the fresh mushrooms and serve at once.

If vegetables are to be added, they should be already cooked, seasoned and hot; place in the centre of the omelet, just before turning; so with mushroom, shrimps, or any cooked ingredients. All omelets should be served the moment they are done, as they harden by standing, and care taken that they do not cook too much. Sweet omelets are generally used for breakfast or plain desserts.

Other campers' comforts, too, had been secured, so that they even carried a certain amount of condensed food in the shape of milk powder; evaporated eggs that could be used to make excellent omelets in case of necessity; and even soup in double cans, with a layer of unslacked lime between, which, by the addition of a little water to the lime could be heated up beautifully without the aid of a fire.

But round them blared the brazen interest in kidneys, and as Claire glanced up with much brightness at another arrival, Milt lost momentum, and found that there was absolutely nothing in the world he could say to her. He made a grateful farewell to the omelets and kidneys, and escaped. He walked many miles that day, trying to remember how Claire looked.
