Salt-rising bread is not universally popular, yet many persons are fond of it. Its taste is very agreeable, and, as a rule, its texture is excellent; however, it always has an unpleasant odour. The method given in the accompanying recipe for salt-rising bread differs in no way from the usual method of making it.

And after that, the next most distressing sight is the same fat man after he has undressed and is lying there, spouting like a sperm-whale and overflowing his reservation like a crock of salt-rising dough in a warm kitchen, and wondering how he can turn over without bulging the side of the car and maybe causing a wreck.

The principal dish for dinner was venison stew, served with vegetables and salt-rising bread. There was cake, too, very heavy and indigestible, and speckled with huckleberries that had been dried the fall previous. Aunt Kate was no fancy cook; but appetite is the best sauce, after all, and Nan had her share of that condiment.

We all resented this displacement of our usual salt-rising loaf and delicious saleratus biscuits but we ate the hot gems, liberally splashed with butter, just as we would have eaten dog-biscuit or hardtack had it been put before us. One of the sayings of my uncle will fix his character in the mind of the reader.

So Elvira drew up the paper according to his dictation, and, leaving it with him, rode home in the dusk of the evening, feeling happy over her prospects. Her grandmother had supper ready in the little kitchen; and it tasted so good, the salt-rising bread and butter and hash, the little tea-cakes, and the preserved pears.

Aunt Clarinda almost immediately pounced upon the bread plate and passed it with a smile to Marcia, and as Marcia with an answering smile took a generous slice she heard the other two aunts exclaim in chorus, “Oh, don’t pass her the bread, Clarinda; take it away sister, quick! She does not like salt-rising! It is unpleasant to her!”

There were worse things in the world, after all, than salt-rising, and, when one could smother it in Aunt Amelia’s peach preserves, it was quite bearable. Aunt Clarinda slipped her off to her own room after supper, and left the other two sisters with their beloved idol, David.

Broiled chicken, fried chicken, in quantity, whole hams simply entreating to be sliced, barbecue, pickle in great variety, drained and sliced for eating, beaten biscuit, soda biscuit, egg bread, salt-rising bread, or rolls raised with hop-yeast only a few attempted them every manner of pie, tart, and tartlet that did not drip and mess things, all the cakes in the calendar of good housewifery with, now and then, new ones specially invented.

It has, however, when kept, some characteristics which remind us of the terms in which our old English Bible describes the effect of keeping the manna of the ancient Israelites, which we are informed, in words more explicit than agreeable, "stank, and bred worms." If salt-rising bread does not fulfill the whole of this unpleasant description, it certainly does emphatically a part of it.

An hour after supper Scarborough could no longer hold his eyes open. "Wake me with the others," he said to Mrs. Gabbard, who was making up the "salt-rising" yeast for the morrow's baking. "I'll have breakfast when they do." "I reckon you've earned it," said Mrs. Gabbard. "Eph says you laid it over 'em all to-day." "Well, I guess I at least earned my supper," replied Scarborough.
