Perkins's favourite habit before a looking-glass, to see how it was done. This was on the day after our first meeting. The habit was subtly characteristic of the man, because it was so suggestive of gustatory enthusiasm. He was for ever savouring the taste of life and of words, especially of words.
Or the gustatory romance of Cheddar cheese, musty ale, roast lamb and greens. Or it had been the romance of the Cook's tourist the romance of cathedrals, towers, palaces, dungeons and parliamentary buildings. Or the romance of pomp, of horseguards and helmets and epaulettes and brass buttons and guns at "present arms."
He did not overextend himself in the gustatory line that to one of John Wesley Bass' natural gifts and attainments well-nigh would have been impossible; but he betrayed a lack of caution when, having broken his former record by eating thirty-six raw eggs at a sitting, he climbed upon a steam merry-go-round, shortly thereafter falling off the spotted wooden giraffe which he rode, and being removed to the city hospital in an unconscious condition.
But these pernicious habits, and all similar indulgences, lessen the sensibility of the gustatory nerve, and ultimately destroy the natural relish for healthful food and drink. By this means, also, the digestive powers become disordered, and the general health is materially impaired.
I will only point out for the present that the mucous coat of the tongue and palate, in which the gustatory nerve ends, originates from a part of the outer skin. Its mucous lining is therefore formed, not from the visceral, but from the cutaneous layer, and the taste-cells at the surface of the tongue and palate are not products of the gut-fibre layer, but of the skin-sense layer.
Salt, spices, essences, vanilla, vinegar, pickles, capers, ketchups, sauces, chutneys, lime-juice, curry, and all the rest, are just our civilised expedients for adding the pleasure of pungency and acidity to naturally insipid foods, by stimulating the nerves of touch in the tongue, just as sugar is our tribute to the pure gustatory sense, and oil, butter, bacon, lard, and the various fats used in frying to the sense of relish which forms the last element in our compound taste.
