When properly made, the uninitiated generally refuse to believe that they do not contain eggs or baking-powder. But with a favourable oven I have got pretty good results from the ordinary baking-tins with depressions, the kind used for baking small cakes. But these are a thinner make and apt to produce a tough crust. This bread has a very sweet taste.

Turn out on baking-tins and place in the oven fifteen minutes to brown. To be eaten warm, whatever is left over can be steamed again or toasted. Mix and sift one cup of corn-meal, one cup of flour, two tablespoons of sugar, one-half teaspoon of salt, three teaspoons of baking-powder.

In summer the bread should not be wet over night.
