It is not a despicable or very ascetic regimen which Stevenson lays before us under April in his reproduction of Breton's "Fantasticks," 1626, under the title of the "Twelve Months," 1661: "The wholesome dyet that breeds good sanguine juyce, such as pullets, capons, sucking veal, beef not above three years Old, a draught of morning milk fasting from the cow; grapes, raysons, and figs be good before meat; Rice with Almond Milk, birds of the Field, Peasants and Partridges, and fishes of stony rivers, Hen eggs potcht, and such like."

The logical reason that pipe brooder houses have found use in the winter chicken business and not in rearing pullets is that of season and profits. When chicks are to be hatched in the dead of winter the steam-heated brooder house is a necessity. In this limited use it is all right, where the profits per chick are great enough to stand the expense and losses.

Keep Only Workers. On many farms few eggs are gathered from October to January. This is a season when eggs bring the best prices. To secure eggs at this season, the first requisite is that the pullets be hatched between the first of March and the middle of May, or, in the case of Leghorns, between the first of April and the first of June.
The young ostriches, when they emerge from the nest, are about the size of pullets. They are quickly able to follow the mother, who supplies them for a considerable time with food. Their colour is a kind of pepper and salt, resembling the gravel and sand of the plain over which they roam; so that it is with the greatest difficulty they can be seen by the hunter, even when close to them.

You must hatch at a time which will allow the young hens to begin laying as winter approaches; the food must keep up animal heat and the house must be warm enough to make the hens comfortable, and the conditions must be such as to keep them laying. As an experiment, we once raised six pullets. They were hatched in May, and in December they began laying.
Now, as the eggs laid by a hen are worth several times the value of her carcass, it stands to reason that once we succeed in rearing pullets, egg farming must be the most profitable business to engage in. For each hen that passes through a laying period there is her own carcass, and at least one cockerel, that are necessarily produced and that must be marketed.
