It is well to remember that there are bacteria in all ordinary milk, and that if the milk is from healthy cows and is kept clean and cold these bacteria are harmless. Most of them are the lactic acid bacteria, which change the milk sugar into acid.
Adults usually digest buttermilk and clabbered milk more easily than the sweet milk. The lactic acid seems to be quite beneficial. Metchnikoff thought for a while that he had discovered how to ward off decay and old age by means of the lactic acid bacteria in milk. Milk can be clabbered quickly by adding lemon juice to sweet milk. Junket: Add rennet to milk and let it stand until it thickens.
Up to the present, however, there has been no application of such methods. The commercial aspects of the industry are not upon a sufficiently large scale to call for much in this direction. At the present time the only method we have for the manufacture of lactic acid is dependent upon bacteria. Chemical processes for its manufacture are known, but not employed commercially.
If the milk is kept in a cold place the bacteria multiply slowly. If it is kept in a warm place they increase in numbers at a rate that is marvelous, and consequently the milk sours much sooner. Even if the milk is kept cold, bacterial growth will soon take place, but it will perhaps not be lactic acid bacteria.
"I've got a hundred people to see to-day. My boy, I must be down there if I have the rattle in my throat. I didn't build up a practice to have it ruined by a few ounces of lactic acid." "James dear, you can easily build up another one," said his wife, in her cooing voice. "You must do what Dr. Munro tells you."
"Susie, can't you take Teether over to your Aunt Prissy and tell her that Mother says please give him his milk right away, for it's past time, and she will come in a few minutes?" asked the singer lady, as she handed the reluctant baby to the small girl at her side. "Milk, thank ma'am, please," demanded Martin Luther quickly, having no intention of being left out of any lactic deal.
Had I gone across the street to the brilliant premises of the Cut Rate Pharmaceutical where they burn electric light by the meterfull I should no sooner have said "tooth brush," than one of the ten clerks in white hospital jackets would have poured a glittering assortment over the counter prophylactic, lactic and every other sort.
Often, also, the Mycoderma vini appeared after some days upon the surface of the liquid. The Vibria and the lactic ferments properly so called did not appear on account of the nature of the liquid. "The third series of flasks, the washing-water in which had been previously boiled, remained unchanged, as in the first series.
Salvarsan has not been proved of value. Intestinal antisepsis may be attained more or less successfully by the administration of yeast or of lactic acid ferments together with suitable diet. The nuclein of yeast may be of some value in promoting a leukocytosis. It has not been shown, however, that the polymorphonuclear leukocyte increase caused by nuclein has made phagocytosis more active.
Need we add that this assertion is based on no substantial foundation? The cells belonging to the grains of barley, or their albuminous contents, never do produce cells of alcoholic ferment, or of lactic ferment, or butyric vibrios.
