The earliest unicellular organisms can only have been evolved from the simplest organisms we know, the Monera. These are the simplest living things that we can conceive. Their whole body is nothing but a particle of plasm, a granule of living albuminous matter, discharging of itself all the essential vital functions that form the material basis of life.

Dorsiventrality is also clearly derived from radial construction, and anatropy of the ovule has followed atropy. We should expect the albuminous state of the seed to be an antecedent one to the exalbuminous condition, and the recent discoveries in fertilization tend to confirm this view.

Surely there is no ground for maintaining that they are produced by hemi-organism, since a medium composed of sugar, or chalk, or phosphates of ammonia, potash, or magnesia contains no albuminous substances. Now what bearing on this purely imaginary theory can the fact have, that a whole fruit, immersed in carbonic acid gas, immediately produces alcohol and carbonic acid?

The earlier and lower stage are the unnucleated cytodes, the body of which consists of only one kind of albuminous matter the homogeneous plasson or "formative matter." A phytomoneron, the globular plastids of which secrete a gelatinous structureless membrane. The Monera are permanent cytodes. Their whole body consists of soft, structureless plasson.

It is necessary, however, before touching upon this curious feature in connection with fermentations to insist on the accuracy of a passage in the preceding summary; the statement, namely, that yeast could multiply in an albuminous liquid, in which it found a non- fermentable sugar, milk-sugar, for example.

From this time the yolk begins to take its color, the oily cells assuming a yellow tint, while the albuminous cells near the vesicle become whiter.

With the object of relieving gastric troubles, our manufacturing chemists scrape the stomachs of the pig and sheep and thus obtain pepsin, a digestive agent which possesses the property of liquefying albuminous matters and lean meat in particular. Why cannot they rasp the stomach of the maggot!
