People tell of all the noble, generous things he would do if he were only here. If he were only here! Petitions are circulated for his return. The law's delay ensues, and this but increases desire. Hate for the man has turned to pity, and pity turns to love, as starch turns to gluten. The man comes back, and is greeted with boughs and bays, with love and laurel.

It is of less importance in the making of bread than spring, or hard, wheat, but it is the kind that has been grown for centuries and from which the varieties of spring wheat have been cultivated. It is a softer grain than spring wheat, because it contains less gluten and more starch.

To explain how the constant waste of these substances may be supplied, a celebrated chemist observes that the albumen, gluten, caseine, and other nitrogenized principles of food, supply the animal with the materials requisite for the formation of muscle and cartilage; they are, therefore, called flesh-forming principles.

It goes to form the fibres of those muscles which are contained in a half formed state in the blood. You are laughing by this time I know, and I also know the reason why. I have told you the same story twice over. You have not forgotten my wearisome description of gluten, and here I am, saying exactly the same thing of fibrine! You conclude I am dreaming, and have made a mistake!

Two or three yards of it at a time, was cut into pieces about five inches long, the hair singed off, the sand scratched out, and these pieces were dropped into our camp kettle and cooked until the whole formed one mass of jelly or gluten which was, to us, quite palatable.

Dissolve one cake of compressed yeast and one tablespoon of sugar in one cup of milk, scalded and cooled, and one cup of lukewarm water; add one level tablespoon of butter then three cups of gluten flour gradually, and one teaspoon of salt.

Fill pans three-fourths full. Beat the yolks of two eggs, add one cup of milk; then one and one-half cups of gluten flour, two teaspoons of baking powder; beat well, stir in the whites of the two eggs, and bake in hot buttered gem pans about twenty minutes. Mix one-half cup of molasses, one-half cup of sugar, one tablespoon of butter, and warm slightly; beat up well and stir at least ten minutes.

The grain of the California wheat is white and soft, and contains much gluten. No matter what hard red or yellow varieties are brought from other countries and planted here, in a year or two they change to the California type. It is not certainly known what causes this peculiarity.

The meal contains no gluten, and therefore would be useless as cement. It contains only a smallrelative portion of starch, and, when mixed with water, it separates and falls away like so much earthy matter. It may serve as food for the subterranean workers. But the young or larvae of ants are usually fed by juices secreted by the worker nurses.
