The bandstand was still there, and a military band, in sky- blue Saxon uniform, was executing the first item in the forenoon programme of music. Around it, instead of the serried rows of green chairs that Yeovil remembered, was spread out an acre or so of small round tables, most of which had their quota of customers, engaged in a steady consumption of lager beer, coffee, lemonade and syrups.
Their life was one continual stream of liquid sugar.... And yet Ferragut could easily guess the disobedience of the two old folks to the discipline of diet, their childish deceptions, their cunning in order to enjoy alone the fruits and syrups which were the enchantment of their existence. The interview was a short one.
There is a time, I think, according to one of our poets, when lust and envy sleep. This, I suppose, is when they are well gorged with the food they most delight in; but, while either of these are hungry, Nor poppy, nor mandragora, Nor all the drousy syrups of the East, Will ever medicine them to slumber. The colonel was at present unhappily tormented by both these fiends.
I walk'd on to Armory hospital took along with me several bottles of blackberry and cherry syrup, good and strong, but innocent. Went through several of the wards, announc'd to the soldiers the news from Meade, and gave them all a good drink of the syrups with ice water, quite refreshing prepar'd it all myself, and serv'd it around.
They were three full, exquisite days a true honeymoon. They were at the Hotel-de-Boulogne, on the harbour; and they lived there, with drawn blinds and closed doors, with flowers on the floor, and iced syrups were brought them early in the morning. Towards evening they took a covered boat and went to dine on one of the islands.
After an enormous consumption of cakes, orgeat, punch, lemonade, and various syrups, those who had come that evening solely for political reasons and who were not accustomed to Madame Marion's floors, to them aristocratic, departed, all the more willingly, because they were unaccustomed to sitting up so late. The evening then began to take on its usual air of intimacy.
And so there is a great coming and going up the outside stairs and through the wonderful doorway: beggars crouch under the wall of the terrace; the sellers of cakes, of syrups and lemon-water, and of the big and luscious watermelons that are so popular in Cairo, display their wares beneath awnings of orange-colored sackcloth, or in the full glare of the sun, and, their prayers comfortably completed or perhaps not yet begun, the worshippers stand to gossip, or sit to smoke their pipes, before going on their way into the city or the mosque.
Each was thoughtfully provided with an awning or wooden roof stretching across the road to give shade to travellers, who were lured to pause by bottles of bright-coloured syrups, wine, and beer displayed on flower-decked tables. Our chosen châlet made a specialty of milk, and a view.
Occasionally sugar made into candies, "creams" or syrups, will need clarifying. The process is as follows: Beat up well the white of an egg with a cupful of cold water and pour it into a very clean iron or thick new tin saucepan, and put into the pan four cupfuls of sugar, mixed with a cupful of warm water. Put on the stove and heat moderately until the scum rises.
San Francisco and New York are both equipped with opportunities for all-night indulgences. In not one of these cities does the sight seeker or the joy hunter find difficulty in sampling the syrups of sin. Mysterious guides assail him on the street corners, pouring libidinous tales into his furry ears, tempting him with descriptions like Suetonius's account of the Roman circuses.
