The Concord is the best all-round grape for jelly, although the Catawba grape makes a delicious jelly. Make your jelly as soon as possible after the grapes are sent home from the market. Weigh the grapes on the stems and for every pound of grapes thus weighed allow three-quarters of a pound of the best quality of granulated sugar.

The output of beet sugar was then only about 200,000 tons, as compared with a present production of approximately 8,000,000 tons. But sugar was then a costly luxury while it is today a cheaply supplied household necessity. As recently as 1870, the wholesale price of granulated sugar in New York was thirteen and a half cents a pound, or about three times the present average.

Bake and serve as directed under One-Egg Waffles. Mix two and one-half tablespoons of melted butter, one cup of granulated sugar, two eggs, one cup of milk, one-half nutmeg grated, sifted flour enough to make a batter as stiff as biscuit dough; add two teaspoons of baking-powder and one teaspoon of salt to the sifted flour.

Four cups granulated sugar; one cup cream; one cup water; one-half cake chocolate; one-half cup butter. Cook until it just holds together, then add two teaspoonfuls extract of vanilla and pour into pans, not buttered. When cool enough to bear finger in, stir it until it no longer runs. It should not grain, but be smooth. Cut into squares. From MRS. MARY PAYTON, of Oregon, Lady Manager.

The relative merits of the flour made by the new process and the old have been warmly discussed, but the general verdict of the great body of consumers is that the patent or new process flour is better in every way for bread making purposes, being clearer, whiter, more evenly granulated, and possessing more strength. Careful chemical analysis has confirmed this.

Productions of this kind, which he had the opportunity of observing only once, are sometimes united in masses, and completely close the auditive canal. The surface is granulated and black, and there escapes from it an unctuous fetid discharge. On both sides the animal is exceedingly susceptible of pain, and the excrescences bleed if the slightest pressure is brought to bear upon them.

This is pulverized or granulated, the degree of granulation depending upon the size of the furnace. Coarse granulated carbon works better than finely pulverized carbon, and gives more even results.

Boil slowly until fruit turns white and liquid drops slowly from the spoon. Stir to prevent scorching. Remove from fire. Take an enamelled cup and dip this mixture into the jelly bags, under which large bowls have been placed to catch the drip. Drip overnight. Next morning measure the juice. For every pint allow a pint of granulated sugar, which is put in a flat pan.
