*Filling.* Cream one-half pound of sweet butter and put on ice immediately; take one-half pound of sweet chocolate and break it into a cup of strong liquid coffee; add one-half pound of granulated sugar and let it boil until you can pull it almost like candy; remove from fire and stir the chocolate until it is quite cold. When cold add the chocolate mixture to the creamed butter.

Let rise till very light, then take out on mixing board and roll out to about one-half inch in thickness. Cut in rounds three inches in diameter and lay on a well-buttered pan, pressing down the centre of each so as to raise a ridge around the edge. When well risen, brush the top over with stiffly-beaten white of an egg and sprinkle with granulated sugar.

The first modification I adopted consisted in substituting for the large quantity of granulated albumen a single half of the white of an egg in one piece. I likewise arranged a check experiment in which the pepsin was omitted, other conditions remaining unaltered. At the end of four hours the residual pieces of albumen were placed on blotting paper to remove superfluous moisture, and weighed.

It is believed that this pleasing insect sometimes gets into the skin, and produces a kind of itch. I do not believe there is much danger of adulteration in good loaf or crushed white sugar, or good granulated or brown sugar. Pepper is mixed with fine dust, dirt, linseed-meal, ground rice, or mustard and wheat-flour; ginger, with wheat flour colored by turmeric and reinforced by cayenne.

The specific gravity of silver is 10.4, and of lead 11.35: the granulated lead, which sinks, is never absolutely pure, and the residual fluid metal contains, when richest, only 1/119 part of silver.

Packed in granulated charcoal as an anti-ferment, the seed with several others which failed came from steamy Singapore, and over all the stages of germination I brooded with wonder and astonishment.

The city grew out of the ground-mist, a particolored blur at the delta of the dry Hoork River, and then a color-splashed triangle between the river and the bay and the hills on the landward side, and then it took shape, cross-ruled with streets and granulated with buildings.

Dry sherry is a good substitute for cherry bounce, likewise apricot brandy, while vermouth or chartreuse will answer for peach liqueur, which is unlikely to be in hand unless you are a very old-fashioned housekeeper. Peach Liqueur: Peel a peck of very ripe, very juicy peaches, cut from the seed, weigh, and pack down in earthen or agate ware with their own weight in granulated sugar.

A cloth bag of granulated sugar had eagerly absorbed all the oil it could. There was no remedy but to throw away half of our supply. As I have said, the longer one works in the Andes the more desirable does sugar become and the more one seems to crave it. Yet we were unable to procure any here.

She said she was out of flour and granulated sugar, and would want raisins and coffee and tea, beside a vegetable for dinner and some lettuce and meat. They planned the meals together, and decided on having a dessert of apple-tart, made with apples and cream, and these were added to the list Margaret wrote down so nothing would be forgotten; then they set out.
