Since many of them have pleasing odors they have been called sweet, and since they have been long used in cookery to add their characteristic flavors to soups, stews, dressings, sauces and salads, they are popularly called culinary. This last designation is less happy than the former, since many other herbs, such as cabbage, spinach, kale, dandelion and collards, are also culinary herbs.
Housewives with a fine contempt for hotel soups sent broths of chicken and beef. The local members of the U. C. T. sent roses enough to tax every vase and wash-pitcher that the hotel could muster, and asked their wives to call at the hotel and see what they could do.
But though their faces, so far as he had seen them, were unfamiliar to him, their identity was made plain to him by the first words which caught his ear. Brown soups are made by frying the meat or game used in them till thoroughly brown on all sides, and using dark spices or sauces in their seasoning. White soups are made with light meats, and often with the addition of milk or cream.
But, after all, may it not well be doubted if a sharp shock and a second's blindness, and a sudden sweep down under the walls of the Cathedral or the waters of the Tagus, were not, on the whole, a quicker and pleasanter mode of extinction than that social earthquake "gone to the bad with a crash"? And the Lisbonites did not more disbelieve in, and dream less of their coming ruin than Cecil did his, while he was doing the season, with engagements enough in a night to spread over a month, the best known horses in the town, a dozen rose-notes sent to his clubs or his lodgings in a day, and the newest thing in soups, colts, beauties, neckties, perfumes, tobaccos, or square dances waiting his dictum to become the fashion.
Of how many creams, jellies, salads, peaches, white soups, grapes, pates, galantines, cups of tea, champagne, and so forth, Lady Clavering partook, it does not become us to say.
