The descent into the lower part of the house was a new experience. Betty had not before seen huge, flagged kitchens, vaulted servants' halls, stone passages, butteries and dairies.
Why! for fifteen years you have talked of nothing but buying Les Tresorieres, that pretty little property near Chinon, where there are woods and fields, and ponds and vineyards, and two dairies, which bring in a thousand crowns a year, with a house which we both like, all of which we can have for sixty thousand francs; and, lo! Monsieur now wants to become something under government!
This institution has now reached the point where it can begin to judge of the value of its work as seen in its graduates. Some years ago we noted the fact, for example, that there was quite a movement in many parts of the South to organise and start dairies.
About these great houses there had usually been good outbuildings, laundries, married servants' quarters, stabling, dairies, and the like, suitably masked by trees, we turned these into homes, and to them we added first tents and wood chalets and afterward quadrangular residential buildings.
Certified milk is simply milk that is produced and marketed under prescribed sanitary conditions. The dairies are inspected periodically by representatives of some medical society or other organization to see that all regulations are observed, who certify that this is done; hence the name. Milk from other dairies is prohibited by law from being sold under the name "certified milk."
The filthy dairies that were the rule a few years ago are slowly being replaced by dairies that are comfortable, well lighted and clean. Do not allow the germs to scare you, for if ordinary precautions are taken no more of them will be present than are necessary, and they are necessary. They thrive best in filth, and they are dangerous only to those who live so that they have no resistance.
