A little lacquer table, about six inches high, on which were arranged a pair of chop-sticks, a basin of soup, a bowl for rice, a saki cup, and a basin of hot water, was placed before each person, whilst the four Japanese maidens sat in our midst, with fires to keep the saki hot, and to light the tiny pipes with which they were provided, and from which they wished us to take a whiff after each dish.

Chop-sticks are, of course, provided; but, as yet, my dexterity in the manipulation of these articles is decidedly of the negative order, and so my pocket-knife performs the dual office of knife and fork; for the rice, one can use, after a manner, the little porcelain dipper provided for ladling an evil-smelling liquid over that staple.

Through the open door we could see the waiter placing steaming cups of tea upon the table we had deserted, and re-entering the room, we seated ourselves in the big carved arm-chairs. Sipping the delicious beverage, we glanced toward the other tables, where groups of Chinamen were talking in a curious jargon and dexterously handling the thin ebony chop-sticks.
