He had ordered a bottle of Sauterne; but the landlord had thought, or the head-waiter acting for him had thought, that a bottle of ordinary wine of the country would do as well. The bottle of ordinary wine of the country had just that moment been sent up-stairs. Then Mr Palliser sat down in the landlord's little room, and had Burgo Fitzgerald's bill brought to him.
He had come to see his friends and to test the famous Sauterne. He flung himself down from his lofty perch to take his seat, entirely as a matter of course, beside us on the green bench. "What luck, hey? greatest luck in the world, finding you in, like this. I've been in no end of a tremble, fearing you'd gone to Caen, or Falaise, or somewhere, and that I shouldn't see you after all.
Some of the gentlemen pronounced them to be excellent, especially the equivalent to Sauterne, which has a wonderful native name impossible to write down; but, as I said before, I do not like the rather rough flavour.
Can you, now remote in the American winter, hear again through the bang of the steaming radiator and the crunch on the winter's snows the song that Sauterne sang into your heart on the terrace named after the lilacs on that wonderful, star-born evening when all the world seemed like a baby's first laugh; all full of dreams and hopes and thrilling futures?
Ah, those midnight carousals, how glorious they would be if there was no next morning! I took my sauterne and sodawater in my dressing-room; and, as indisposition always makes me meditative, I thought over all I had done since my arrival at Paris. It is true that I was every where abused one found fault with my neckcloth another with my mind the lank Mr.
“C’est ici,” quoth Gambouge, hastening to open the door. He did so; and lo! there was a restaurateur’s boy at the door, supporting a tray, a tin-covered dish, and plates on the same; and, by its side, a tall amber-coloured flask of Sauterne. “I am the new boy, sir,” exclaimed this youth, on entering; “but I believe this is the right door, and you asked for these things.”
I therfore observed that I considered it unpatriotic, with the Enemy at our gatez, to have Sauterne on the table and a Cocktail beforehand, as well as expencive tobacco and so on, even although economising in other ways, such as furnature. "What's that?" my father said to me, in a sharp tone. "Let her alone, father," Leila said. "She's just dramatising herself as usual.
At Portets are the ruins of the Château of Langoiran, built before America was discovered, and, a few miles farther on, we came to the region of the famous wines of Sauterne and Château-Yquem. Saint Macaire is a very ancient Gallo-Roman town, where they show one churches, walls, and houses built fifteen centuries ago.
Do not boil prunes, that is what spoils them. Simmer, simmer only. Keep lid on. Shake gently, do not stir, and never let boil. When tender they are ready for table. Serve cold, and a little cream will make them more delicious. A little claret or sauterne poured over the prunes just as cooking is finished adds a flavor relished by many.
But my friend moved not a muscle. The devil had made as though to stretch forth his hand across the table, but he paused in his gesture. "A hundred years hence, as now," he smiled, "no smoking allowed in the reading-room. You would better therefore " Soames removed the cigarette from his mouth and dropped it into his glass of Sauterne. "Soames!" again I cried.
