Dried peas, beans and lentils are more palatable and wholesome when cooked in combination with tomatoes or prunes. The Leafy and Juicy Vegetables growing in or near the ground are very rich in the positive organic salts and therefore of great nutritive and medicinal value. For this reason they are best suited to balance the negative, acid-producing starches, sugars, fats and proteins.

To make them soluble, enzymes break down the proteins, separating the individual amino acids one from the other, because amino acids are soluble. Enzymes that digest proteins work as though they are mirror images of a particular amino acid. They fit against a particular amino acid like a key fits into a lock.

These substances are the fats and oils of various kinds, less powerful sources of energy than the proteins, but they contain more potential energy than the carbohydrates because they are more oxidizable.

The digestive apparatus of the infant is especially adapted to the digestion of milk, while that of the adult requires more solid and bulky food. Milk is a very beneficial article of diet in all acid diseases, because it contains comparatively low percentages of carbohydrates and proteins and large amounts of organic salts. However, not everybody can use milk as a food or medicine.

Water and mineral matter, on the other hand, are never a source of energy; they assist in building new tissue or in repairing tissue that already exists. The proteins are unique, in that they may serve either purpose. Primarily the proteins are tissue-builders, but in the absence of sufficient fat or carbohydrate the body burns protein to secure heat and energy.

If, in addition to this, food and drink contain too much of the waste-producing carbohydrates, hydrocarbons and proteins, and not enough of the eliminating positive mineral salts then waste and morbid materials are bound to accumulate in the system and this results in the clogging of the tissues with acid precipitates and earthy deposits.

This wonderful physical basis of life is called protoplasm. It contains three kinds of chemical compounds known as the proteins, carbohydrates, and hydrocarbons. Proteins are invariably present in living cells, and are made up of carbon, hydrogen, nitrogen, sulphur, and usually a little phosphorus. The elements are also combined in a very complex chemical way.

Amino acids themselves are highly complex organic molecules too. The human body custom-assembles all its proteins from amino acids derived from digesting protein foods, and can also manufacture small quantities of certain of its own amino acids to order, but there are eight amino acids it cannot make and these are for that reason called essential amino acids.

When foods in complex combinations are presented to the stomach all together, like a meal with meat, potatoes, gravy, vegetables, bread, butter, a glass of milk, plus a starchy sweet desert, followed by coffee or tea, the stomach, pancreas, liver and small intestine are overwhelmed, resulting in the fermentation of the sugars and starches, and the putrefaction of the proteins, and poor digestion of the whole.
