Horned cattle are of course never killed by Hindoos, and it was but seldom that I could replenish my larder with a kid. Potatos are unknown, but my Sepoys often brought me large coarse radishes and legumes.
I have simply selected a representative list from the various classes of foods. Under flesh are given fish, meats and eggs. Under succulent vegetables are given both root and top vegetables, because of their similarity. Nuts, cereals, legumes, tubers and fruits are each grouped because it is easy to gain an understanding of them in this way.
When fasting for weight loss, the only way to keep the weight off is to greatly reform the diet; to go on, and stay on, a diet made up largely of non-starchy, watery fruits and vegetables, limited quantities of cooked food, and very limited amounts of highly concentrated food sources like cereals and cooked legumes.
The result is that too much is taken of these rich foods, after which there is indigestion accompanied by gas production. One rather peculiar food belonging to the legumes is the locust bean or St. John's bread, which we can sometimes obtain at the candy stores. It grows near the Mediterranean and is used in places for cattle feed. It is so sweet that it is eaten as a confection.
The nitrogenous portions go through the same series of decomposition and synthetical changes already described, and thus eventually the nitrogen seized from the air by the combined action of the legumes and the bacteria is converted into nitrates, and will serve for food for the next set of plants grown on the same soil.
According to Pliny, it was introduced into Italy from Greece, whence it had been brought from Asia during the Persian wars, and so derived its Greek and Roman name Medica. As Cato does not mention it with the other legumes he used, it is probable that the Romans had not yet adopted it in Cato's day, but by the time of Varro and Virgil it was well established in Italy.
Fish is out of the question in the country; chickens die of the pip every where but in London; game is out of season; it is impossible to send to Gibblet's for meat; it is equally impossible to get it any where else; and as for the only two natural productions of the country, vegetables and eggs, I need no extraordinary penetration, to be certain, that your cook cannot transmute the latter into an omelette aux huitres, on the former into legumes a la creme.
A pea plant in soil that contains no nitrogen products and watered with water that contains no nitrogen, will, after sprouting and growing for a length of time, be found to have accumulated a considerable quantity of fixed nitrogen in its tissues The only source of this nitrogen has been evidently from the air which bathes the leaves of the plant or permeates the soil and bathes its roots This fact was at first disputed, but subsequently demonstrated to be true, and was found later to be associated with the combined action of these legumes and certain soil bacteria.
All day long the deafened roar of carts and carriages, and the muffled cry of the marchands des légumes, were faintly heard from below. In that garret the painter experienced for six months the perfection of Parisian solitude.
The Romans had learned many things which we are now learning again, such as green manuring with legumes, soiling, seed selection, the testing of soil for sourness, intensive cultivation of a fallow as well as of a crop, conservative rotation, the importance of live stock in a system of general farming, the preservation of the chemical content of manure and the composting of the rubbish of a farm, but they brought to their farming operations some thing more which we have not altogether learned the character which made them a people of enduring achievement.
