Out of five Bushels of Malt, I generally make a Hogshead of Ale with the two first Coppers of wort, and a Hogshead of small Beer with the other two, but this more or less according to please me, always taking Care to let each Copper of wort be strained off thro' a Sieve, and cool in four or five Tubs to prevent its foxing.
I knew that wine-casks are of very different dimensions, according to the sort of wine they contain: that under the different names of "pipes", "butts", "hogsheads", "puncheons", "tuns," and "pieces," they hold more or less, from the hogshead of hock of thirty gallons to the great tun of wine containing 252.

I suppose the hogshead stands for the big thoughts of the speaker which he cannot manage at all without the active coöperation of the audience. Morrice, the wine cooper, who this day did divide the two butts, which we four did send for, of sherry from Cales, and mine was put into a hogshead, and the vessel filled up with four gallons of Malaga wine, but what it will stand us in I know not: but it is the first great quantity of wine that I ever bought.

On making his retreat he found himself completely whitened by the lime, which had mixed with the water while dashing down through the different floors; and, as nearly as he could guess, a quantity equal to about a hogshead had come over the walls, and now streamed out at the door.
