Horseflesh, which is frequently used in large establishments, is not so fully to be relied upon as ordinary butcher meat. There is no serious objection to bullocks' heads, sheeps' heads, bullocks' tripes and paunches and a little liver given occasionally is an aperient food which most dogs enjoy. But when it can be afforded, wholesome butcher's meat is without question the proper food.

I said. "No offal tripes swipes ullage." Mr. Pyecroft entered, in the costume of his calling, with the ham and an assortment of tin dishes, which he dealt out like cards. "I shall take these as my orders," said Mr. Moorshed. "I'm chucking the Service at the end of the year, so it doesn't matter." We cut into the ham under the ill-trimmed lamp, washed it down with whisky, and then smoked.

"Door, indeed! you poor whey-faced drab, you dare to say the word door to me, a respectable woman, as Mister Tripes here knows me well, and have a score against me behind that there wery door as you disgraces, and as it's you as ought to be t'other side, you ought; for it's out of the streets as you come, well I knows, an' say another word, and I'll take that there bonnet off of your head, and chuck it into them streets and you arter it.

Take also one or two pounds of Pork, that hath not been salted, and cut it as small as the Tripes, and mingle them altogether; which season with Salt, White-pepper, Anis-seeds beaten and Coriander-seeds; Then make a Liaison with a little Milk and yolks of Eggs; and after all is well mingled and thickned, as it ought to be, you must fill with it the greatest guts of a Hog, that may be had, with a Funnel of White iron, having first tyed the end of the gut below.

"I don't deny it," said Sancho; "so for the present give me a piece of bread and four pounds or so of grapes; no poison can come in them; for the fact is I can't go on without eating; and if we are to be prepared for these battles that are threatening us we must be well provisioned; for it is the tripes that carry the heart and not the heart the tripes.

This they thought had been the child, but it was her fundament, that was slipped out with the mollification of her straight entrail, which you call the bum-gut, and that merely by eating of too many tripes, as we have showed you before.

You are to use small-guts, such as for white-Marrow-puddings, and they are to be cleansed in the Ordinary manner; and filled very lankley; for they will swell much in the boiling, and break if they be too full. Take of the Tripes of Veal the whitest and finest you can find; wash them well, and let them lie in fair Fountain or River water, till they do not smell like Tripes.

Out of doors a sharp wind cut you across the face. But the hall was crammed. There was a thundering big swarm inside; people at all the tables, people in the middle, people up above, quite an amount of flesh. Yes, those who cared for tripes could enjoy themselves. When they had made the round twice without finding a vacant table, they decided to remain standing and wait till somebody went off.

Concurrent with the tripes, one inducted the other into the true mystery of blending shandygaff, explaining the first doctrine of that worthy draught, which is that the beer must be poured into the beaker before the ginger ale, for so arises a fatter and lustier bubblement of foam. The reason whereof they leave no testament.

It is to pave the stomach, to practice the chemistry of nature, to register the various dishes, to regale your tripes, to dig your grave with your teeth, play with the sword of Cain, to inter sauces, to support a cuckold. But more philosophically it is to make ordure with one's teeth. Now, do you understand? How many words does it require to burst open the lid of your understanding?
