Hot oysters, salads, boned turkey, quail, and hot terrapin, with wines ad libitum, are offered by the wealthy; but this is a difficult table to keep in order when ten men call at one o'clock, and forty at four, and none between. The best table is one which is furnished with boned turkey, jellied tongues, and pft,s, sandwiches, and similar dishes, with cake and fruit as decorative additions.

To a pound of cherries take a pound of sugar finely sifted, with which strow the bottom of your pan, having stoned the cherries, lay a layer of cherries and a layer of sugar, strowing the sugar very well over all, boil them over a quick fire a good while, keeping them clean skim'd till they look clear, and the syrrup is thick and both of one colour; when you think them half done, take them off the fire for an hour, after which set them on again, and to every pound of fruit put in a quarter of a pint of the juice of cherries and red currans, so boil them till enough, and the syrrup is jellied, then put them in a pot, and keep them close from the air.

The locality did not impress me favorably. There was an abundance of "pubs" and of fried-fish shops where "jellied eels" seemed to be a viand much in demand. Street, when I reached it, was dingy and third rate. Three-storied old brick houses, with shops on their first floors, predominated. Number 218 was one of these.

On it were placed jellied creams in different colors, which had been run into egg-shells to stiffen. The whole was intended to suggest a nest of new-laid eggs.

He heaped fresh wood upon his fire, that the bright light might drive out the gruesome things that lurked above, below, and around him. He became afraid to look behind him, lest some shapeless mass of mid-sea birth some voracious polype, with far-reaching arms and jellied mouth ever open to devour might slide up over the edge of the dripping caves below, and fasten upon him in the darkness.

Shake the dish gently, that the sugar may touch the under side of the fruit. Next day make a thin syrup with the remainder of the sugar, and instead of water, allow to every pound of strawberries a pint of red currant juice. Simmer the fruit in this, until sufficiently jellied. Choose the largest scarlet strawberries, before they are dead ripe.

There could not be a family drama among us three. It is simply about my husband, monsieur, who did his duty as a soldier in defending the throne of his sovereign, my husband whom they mean to assassinate! There is nothing else, no other situation, my dear little guest." To hide her distress she started to carve a slice of jellied veal and carrot. "You have not eaten, you are hungry.

So he was whirled off in one of half a dozen automobiles, and rode for a hundred miles or so to an inland lake, and sat down to an al fresco luncheon of such delicacies as pate de fois gras and jellied grouse and champagne. Afterwards the young people wandered about and amused themselves, and the elders played "bridge", in the face of all the raptures of this wonderland of nature.

The earthly paradise with its luscious store of cake and chicken salad, its commanding pyramid of sandwiches flanked by icing cakes, its plates of dates and olives and candy of every variety, its mound of jellied doughnuts, and a mammoth freezer full of ice cream, floated majestically down the moonlit river, trailing a huge clump of rhododendron bush after it like the tail of a comet.

The butler came with the meal carrying it on a big tray, and with another man to carry a folding table, and yet another to help. Such a display of silver and cut glass! Such snowy linen, and such unimaginable viands! There were piles of sandwiches, each one half a bite for a fairly hungry man. There was jellied game, and caviar, and a pate of something strange and spicy.
