Pork pies are favorite dishes in many rural regions, especially at hog-killing time, and when well made are excellent. If pies are made from raw meat and vegetables longer cooking is needed than otherwise, and in such cases it is well to cover the dish with a plate, cook until the pie is nearly done, then remove the plate, add the crust, and return to the oven until the crust is lightly browned.

Harmon called a timekeeper and said, "Take this man to Pat Murphy and tell him to find room for him somehow." And so Jurgis marched into the hog-killing room, a place where, in the days gone by, he had come begging for a job. Now he walked jauntily, and smiled to himself, seeing the frown that came to the boss's face as the timekeeper said, "Mr. Harmon says to put this man on."

But the contents of the despatches gave him new topics for thought and speech. The part he must play in the proposed descent on Montreal was flattering, but it made the Ticonderoga entrenchments ridiculous. For three days Rolf was kept cutting wood, then he went with despatches to Albany. Many minor labours, from hog-killing to stable-cleaning and trenching, varied the month of March.

As the Yule-tide season approached the work of the plantation was rounded up and everything got ready for the festival. The corn was all in the cribs; the hog-killing was at an end, the meat salted or cured, the lard tried out, the sausage-meat made.

Taking a single look at the miserable band of whites and blacks collected in the barn, and revealed by a lantern's light in the excitement of drink and avarice, or the familiarity of fear and vice some inspecting gags of corn-cob and bucks of hickory, others trimming clubs of blackjack with the roots attached; others loading their horse-pistols and greasing the dagger-slides thereon; some whetting their hog-killing knives upon harness, others cutting rope and cord into the lengths to bind men's feet Levin was set on the loping horse he had been already riding, by Clark, the host, and soon met Sorden on the road.

But about a fortnight after the hog-killing frolic an incident occurred which served to take both Bryce and Enoch away from the cabin. There had been a second fall of snow and the nights were becoming very cold.

But during my entire time of residence there no one ever offered to take me to them. As for the sewerage oh, well, I suppose we are more hospitable in America. Let it go at that. I had my answer all written and ready, saying: "I understand that London is the second greatest hop-consuming, the fourth hog-killing, and the first egg-absorbing centre in the world."

Spare ribs and backbone, jowl and feet, souse and sausage, liver and chitterlings greased every mouth on the plantation; and the crackling-bread, made of corn meal mixed with the crisp tidbits left from the trying of the lard, carried fullness to repletion. Christmas and the summer lay-by brought recreation, but the hog-killing brought fat satisfaction.

Amid jokes and laughter the husks and ears would fly, until the work was done, when all hands would repair to the house, and, after partaking of a hearty supper, leave for home in high spirits. Then came hog-killing time, a very heavy and disagreeable task, but the farmer has many of these, and learns to take them pleasantly.

Jurgis recollected how, when he had first come to Packingtown, he had stood and watched the hog-killing, and thought how cruel and savage it was, and come away congratulating himself that he was not a hog; now his new acquaintance showed him that a hog was just what he had been one of the packers' hogs.
