Take a small piece of onion, slice into small bits, and put into a saucepan with two tablespoons of butter. Cook until onion is browned. Wash well one-half cup of rice. Put it into the saucepan with the onion, add salt and pepper, and fry until the rice is dry. Then add grated cheese, Parmesan or Gruyere, one and one-half tablespoons of butter, and mix well over the fire, then serve.

Mince finely a veal kidney and add one-half pound of minced veal. Make a brown sauce of flour and butter, and add the meat to it. Let it cool a little, and add three well-beaten eggs, with a teaspoonful of rasped Gruyere. Butter a mold, and sprinkle the inside with breadcrumbs, and fill it with the mince.

We held a front of about a mile, and, therefore, not only did I have to do the above-mentioned mile and a half, but also two or three miles going from end to end of our line. It was as dark as could be, and the unfamiliar ground seemed to be pitted like a Gruyère cheese with shell holes.

Hanging from a front shelf in a conspicuous position among the collection was a strip of the identical silver ribbon which had encircled Pepin's throat I called the dog Pepin on the night I rescued him from the streets. Without hesitation I entered the shop and questioned a slatternly woman who sat behind the counter munching gruyere cheese and garlic.

When his service allowed him to do so, he would go into Paris and spend twenty-four hours there, profiting by it to have a champagne dinner at Brebant's or Voisin's, in company with some beautiful girl, and to eat the luxurious dishes of that time, such as beans, Gruyere cheese, and the great rarity which had been secretly raised for three months on the fifth floor, a leg of mutton.

This thing has not been built longer than two years. The wall has that hideous and glacial whiteness of fresh plaster. The whole is wretched, mean, high, triangular, and has the shape of a piece of Gruyere cheese cut for a miser a dessert. There are new doors that do not shut properly, window frames with white panes that are already spangled here and there with paper stars.

There was their fat waiter in front with a large covered cheese-dish. Behind him was another with two smaller ones, and a third with some yellow powder upon a plate was bringing up the rear. 'This is Gorgonzola, main, said the waiter, with a severe manner. 'And there's Camembert and Gruyere behind, and powdered Parmesan as well. I'm sorry that the Stilton don't give satisfaction.

A solid wedge of Gruyere cheese, which had been wrapped in a newspaper, bore the imprint: "Items of News," on its rich, oily surface. The two good sisters brought to light a hunk of sausage smelling strongly of garlic; and Cornudet, plunging both hands at once into the capacious pockets of his loose overcoat, produced from one four hard-boiled eggs and from the other a crust of bread.

Every field is pitted with holes, and where there are stretches of pale-coloured mud the round pits dotted all over it give one the impression of an immense Gruyère cheese. The streets, heaped with débris, and with houses fallen helplessly forward into their midst, were full of sunshine.
