For six lemons take one box of boneless sardines, six anchovies, and two green peppers, cut very fine. Wet with lemon-juice until moist; fill in shells after wiping dry; insert a pimento on top; put on cover of lemon; serve on doily with horseradish and watercress. Serve on a folded napkin, garnished with watercress. Shell and skin freshly roasted peanuts and proceed as in salting almonds.
Do not carry any of the one hundred and one condiments, sauces, garnishes, etc., laid down in the books. Salt, pepper and lemons fill the bill in that line. Lobster-sauce, shrimp-sauce, marjoram, celery, parsley, thyme, anchovies, etc., may be left at the hotels. It may be expected that a pocket volume on woodcraft should contain a liberal chapter of instruction on hunting.
He doth learn to make strange sauces, to eat anchovies, maccaroni, bovoli, fagioli, and caviare, because he loves them; speaks as he speaks, looks, walks, goes so in clothes and fashion: is in all as if he were moulded of him.
He was especially fond of fish and all the progeny of the water,—eels, frogs, oysters, and the like. The trout of the neighborhood were too small for his liking, so he had larger ones sent from a distance. Potted fish—anchovies in particular—were favorite viands. Eel pasty appealed strongly to his taste. Soles, lampreys, flounders reached his kitchen from Seville and Portugal.
Take the white part of a turkey, or other fowl, if you have neither, take a little white veal and mince it pretty small; take a little hang beef or tongues, scrape them very fine, a few shred capers, and the yolks of four or five eggs shred small; take a delf dish and lie a delf plate in the dish with the wrong side up, so lie on your meat and other ingredients, all single in quarters, one to answer another; set in the middle a large lemon or mango, so lie round your dish anchovies in lumps, picked oysters or cockles, and a few pickled mushrooms, slices of lemon and capers; so serve it up.
She darted in and out between the tables, managing her unwieldy farthingale with amazing skill. She poured out the wines, and offered tarts and dishes of anchovies and of cheese, also strange steaming beverages lately imported into England called coffee and chocolate. The women liked the latter, and supped it out of mugs, with many little cries of astonishment and appreciation of its sugariness.
Certain edibles, such as charlotte-russe, Spanish cream, wine jellies and mousses, to say nothing of the caviars and anchovies, were wholly unknown to them; but they ate the dainties with a wise disregard of their inexperience and enjoyed them immensely.
To meet his manifold social needs, he sends to his wife orders for prunes, olives, anchovies, muscat wine, capers, sausages, confectionery, cloth for liveries, and many other such items; also for scent-bags of two kinds, and perfumed pomatum for presents; closing in postscript with an injunction not to forget a dozen pint-bottles of English lavender.
I have become used to seeing dots of red all over the ocean. This tank is kept full of fresh sea-water by a pump connected with the engine, and it is used to keep live bait no other than the little anchovies. One Jap, using a little net, dips up live bait and throws them overboard to the albacore. Another Jap beats on the water with long bamboo poles, making splashes.
