When cold, cover each glass with white paper dipped in brandy, and tie it down tight with another paper. Keep them in a cool place. Quince Jelly is made in the same manner, but do not pare the quinces. Quarter them only. Wash your currants, drain them, and pick them from the stalks. Mash them with the back of a spoon. Put them in a jelly-bag, and squeeze it till all the juice is pressed out.
Then put them into a preserving kettle with a tumbler of water to each quart of currants; cover it closely, set it over a moderate fire, and when the currants have come to a boil, take them out, and squeeze them through a jelly-bag. Black currant jelly is excellent for sore throats; and if eaten freely on the first symptoms of the disease, will frequently check, it without any other remedy.
The Rector received us very courteously; showed us himself the splendid view from the tower, the Salle where degrees are conferred, and allowed us to peep into a gallery and through a window to see the lecture-rooms; then, making his bow, sent us with an attendant to the chapel, where we were joined by the Professor of German, Herr Duerzen, clad in the ample cape or cloak and with the black jelly-bag cap which is the academic costume.
The main body then remained stationary, and a certain portion of it continued bellying down until it had assumed the form of an enormous jelly-bag. From the end of this bag a thin, wiry, black tongue of vapour continued to descend until it had arrived half-way between the cloud and the sea.
In making this jelly, use only a silver spoon, and carefully observe all the above precautions, that it may be transparent and delicate. If it is not quite clear and bright when done boiling, you may run it again through a jelly-bag. White raspberry jelly may be prepared in the same manner.
Plum marmalade may be made in this manner, flavouring it with pounded plum-kernels. Take fine juicy free-stone peaches and pare and quarter them. Scald them in a very little water, drain and mash them, and squeeze the juice through a jelly-bag. To every pint of juice allow a pound of loaf-sugar, and a few of the peach-kernels.
Then throw in a tea-cup of cold water, and boil it five minutes longer; then take the kettle off the fire, and set it aside, keeping it closely covered for half an hour; this will improve its clearness. Take a large white flannel jelly-bag; suspend it by the strings to a wooden frame made for such purposes, or to the legs of a table.
And Helene dipped a courtesy to him, dainty and sweet enough to conquer an angel, while the great jelly-bag shook himself almost to pieces in his eagerness to achieve a masterly bow. All this made me angry, not that I cared though Helene had coquetted with a dozen lads, an it had liked her.
The Method which I have taken to preserve this Juice to be used in Punch, was to express the Juice, and pass it thro' a Jelly-bag, with about two Ounces of double-refined Loaf-Sugar to each Pint of Juice, and a Pint of Brandy, or Arrack; bottle this up, and cork it well with sound Corks, and you may keep it a Year.
After a scramble through the surf, we were received at Shark Point, where, at this season, the current is nearer five than three knots, by Mr. Tom Peter, Mafuka, or chief trader, amongst these "Musurungus." He bore his highly respectable name upon the frontal band of his "berretta" alias "coroa," an open-worked affair, very like the old-fashioned jelly-bag night cap.
