The dairy products are shipped by rail to various parts of Europe, large quantities going to England and to Denmark, the home of dairying. Sometimes three hundred tons of butter per week are shipped to Copenhagen and one thousand tons to London. Upward of eighty million pounds are annually exported, and it is said that by a little exertion fifteen times the amount could be easily produced.

They can be thus taught far more easily, will take a greater interest in their studies, and can gain both knowledge and skill which will be more valuable to them in the world of work. They also need to be taught indoors manual training, domestic science, printing, laundry work, scientific horticulture, scientific agriculture, dairying, and many other such branches.

The creation of a large number of Allotment Farms would make the establishment of a creamery necessary, where the milk could be brought in every day and converted into butter by the most modern methods, with the least possible delay. Dairying, which has in some places on the Continent almost developed to a fine art, is in a very backward condition in this country.
