The eternal lounging in coffee- houses and sipping of sorbets, agrees perfectly well with the inhabitants of the Ottoman empire, who stalk about here in their proper dresses, and smoke their own exotic pipes, without being stared and wondered at, as in most other European capitals.
Hot water spoils the gloss of puddings, and unless you know exactly how to use it, the cream is too much melted to garnish. All frozen puddings, water ices, sherbets and sorbets are frozen and molded according to these directions. The quantities given in these recipes are arranged in equal amounts, so that for a smaller number of persons they can be easily divided.
It was a pleasant evening within and without; the windows were raised, and they could see the people in the gardens strolling beneath the lime trees; the starlight falling on the plashing fountain and the gray, motionless statues; the pearly light of the lines of lamps, shining down the long arcades; the glitter of jewelry and precious merchandise in the marvellous boutiques; the groups which sat around the café beneath with sorbets and glacés, and sparkling wines; the old women in Normandie caps and green aprons, who flitted here and there to take the hire of chairs, and break the hum of couples, talking profane and sacred love; around and above all, the Cardinal's grand palace lifting its multitudinous pilasters, and seeming to prop up the sky.
The doors are as wide open as if the mansion were an hotel; and yet it is not an hotel, though a placard which he passes informs the traveller that he may have ices and sorbets, if he will; nor is the bright fresh-looking building a theatre, for another placard informs the visitor that there are dramatic performances to be witnessed every evening in a building on one side of the quadrangle, which is a mere subsidiary attachment to the vast white mansion.
At first the pretty French girls in silk aprons and coquettish caps tried to execute the orders, but soon their trays were seized by enthusiastic young men and the waitresses took refuge behind the marble table beside the Madame and helped to hand out the tempting cakes and bonbons and sorbets and sirops and liqueurs.
"Oh, I think that's a mistake," Kate hastened to interrupt. "All that I know understand how to serve excellent dinners. Of course, they may not cook them themselves, but I think they could if it were necessary." "Hum!" He picked up a long glove that had fallen from Kate's lap and fingered it before returning it. "I s'pose you cook?" "I make a specialty of salads and sorbets," smiled Kate.
When more than a single meat course is served at a formal dinner, the sorbets and frozen punches should be dropped. In such a case they are only permissible at an especially large official dinner, a banquet or a large hotel spread. The variety of possible salads has already been alluded to in the consideration of the formal luncheon, hence nothing need be added here on that head.
The boxes, large enough to accommodate eight or ten persons, are decorated with handsome silks, the ceilings are painted and ornamented in light and pleasing colors; the woodwork is gilt. Ices and sorbets are served there, and sweetmeats; for only the plebeian classes ever have a serious meal.
Served with bread and butter sandwiches and coffee they are quite sufficient for afternoon or evening cards. Many of the ices in this book are new and attractive. The new sorbets are liked by those who are always striving for a change. Many are old and reliable. At large affairs, serve from the dining table.
