Put all in a preserving kettle, set it upon an asbestos mat over a slow fire, and cook gently for several hours, stirring so it shall not scorch. It must be tender throughout but not mushy-soft. Cauliflower Pickle: Drop two heads cauliflower in salted boiling water, cook fifteen minutes, take up, drop in cold water, separate into neat florets, and pack down in a clean crock.

There are many others of these cushion-forming, diminutive plants, with white, blue, yellow, and pink florets. Examined with a good pocket lens, they reveal unexpected beauties of detail so graceful and harmonious that one wonders that no one has made carefully coloured pictures of them of ten times the size of nature, and published them for all the world to enjoy.

This you would think a great thing? Is this only a little power? Far among the moorlands and the rocks, far in the darkness of the terrible streets, these feeble florets are lying, with all their fresh leaves torn, and their stems broken: will you never go down to them, nor set them in order in their little fragrant beds, nor fence them in their trembling, from the fierce wind?

To see them dipping vertically, head downwards, into the florets, one might suppose that they were seeking some sweet liquid, their food; but in that case they ought to pass more frequently from one floret to another, which they do not, except when, after a false alarm, they regain their hiding-places and choose the spot which seems to them the most favourable.

The strain arising from the carmine variety was kindly given to me by Messrs. Zocher & Co., and was propagated in my garden, while the other was kept in the nursery. In the earlier cultures both remained true to their types, never producing true florets. No mark of the original difference was to be seen between them.

Some of these gorse plants seemed to have a different flower growing at the side of the stem, instead of at the extremity. These florets were cream-coloured, so that it looked like a new species of gorse. On gathering it to examine the thick-set florets, if was found that a slender runner or creeper had been torn up with it.

A hasty inspection of double flower heads may convey the idea that all rays are arranged around a little central cluster of disk-florets, the remainder of the original disk-florets but a closer investigation will always reveal the fallacy of this conclusion. Hidden between the inner rays, and covered by them, lie the little tubular and fertile florets everywhere on the disk.

On the day I speak of he looked for the Menyanthes, detected it across the wide pool, and, on examination of the florets, decided that it had been in flower five days. He drew out of his breast-pocket his diary, and read the names of all the plants that should bloom on this day, whereof he kept account as a banker when his notes fall due. The Cypripedium not due till to-morrow.

There they are, ten, fifteen or more, lodged half-way down the florets of a single blossom or in their interstices; it therefore needs a certain degree of scrutiny to perceive them, their hiding-place being the more effectual in that the amber colour of their bodies merges in the yellow hue of the florets.

In some flowers growing in cymes, the wheel-shape flowers in the margin are multiplied to the exclusion of the bell-shape flowers in the centre; as in gelder-rose. 4th. By the elongation of the florets in the centre. Instances of both these are found in daisy and feverfew; for other kinds of vegetable monsters, see Plantago.
