In the various grains, these tiny granules differ from one another in appearance, but not to any great extent in general structure, nutritive value, or digestibility, provided they are cooked thoroughly. The large amount of carbohydrate, or starch, in cereals explains why they are not hard to digest, for, as is well known, starch is more easily digested than either protein or fat.
But some foods have much higher degrees of nutritiousness or digestibility or wholesomeness than others; so that our problem is to pick out from a number of foods that "taste good" to us, those which are the most nutritious, the most digestible, and the most wholesome, and to see that we get plenty of them.
While fried food is, as a rule, not good at breakfast for any save one who has hard manual labor or physical exercise to perform, an exception may be made of fried mush and fried eggs, because their base is so nutritious that the heated fat can do little to impair their digestibility, while it certainly whets the appetite before eating, and pleases the palate when the food is in the mouth.
The cooking of any food, as is generally understood, tends to break up the food and prepare it for digestion. However, foods have certain characteristics, such as their structure and texture, that influence their digestibility, and the method of cooking used or the degree to which the cooking is carried so affects these characteristics as to increase or decrease the digestibility of the food.
The man who knows that pates de foie gras, or the livers of abnormally fattened geese, disagree with him, and still eats them, is not to be pitied when all the horrors of dyspepsia overtake him. The cooking of any article of food has evidently much, very much, to do with its digestibility.
With this exception food should be selected with regard only for its wholesomeness and digestibility. All food is milk-making food; no sharp distinctions between the various kinds can be recognized. Milk, because it contains all the elements necessary for perfect nutrition, is particularly wholesome.
