The Chinese place the bowls of food, one at a time, in the center of the table and everyone eats out of these bowls, sticking their chopsticks in and helping themselves to what they want. The Manchus eat quite differently and are served with individual bowls and dishes, the same as in any other country. Her Majesty was very proud of this and said that it saved time, not to mention being cleaner.
Her people lived in good houses, wore good clothes, used chairs and tables, chopsticks, plates and dishes of pottery; had for transit boats, carts and chariots,* wheelbarrows I suppose, and "cany wagons light." They had a system of writing, the origin of which was lost in remote antiquity; a large literature, of which fragments remain.
The unhappy foreigner tastes one dish after the other, finds each one worse than the last, and concludes to wait till the next course. There are various other things beans which can be skewered on the chopsticks, and funny little bits of stuff like mixed pickles, but even when we have eaten everything we are as hungry as when we began.

The sticks are called chopsticks; and up in the great house on the hill, where Pen-se went to carry fish, lives a little lady who has beautiful pearl chopsticks, and wears roses in her hair.
Hot courses were now placed on the table, our Chinese friends helping us from them with their chopsticks, which they manipulated with marvellous dexterity. This long menu was gone through accompanied with an abundance of talk, compliments, jokes and the emission of various sounds peculiar to the Chinese while feeding.
Goody Liu was in the act of praising the eggs as small yet dainty, when lady Feng interposed with a smile. "They're one tael each, be quick, and taste them;" she said; "they're not nice when they get cold!" Goody Liu forthwith stretched out the chopsticks with the intent of catching one; but how could she manage to do so?
At once Miss Sterling have Coolies make big fire on rocks, make all dry and warm, get rice ready cooked then girls eat with long hair pins for chopsticks like playing at feast when children.
Then we have John and Sambo in unadulterated profusion; the former ready at the shortest notice and for very small compensation to indoctrinate all comers in the art of plying the chopsticks, and the latter notoriously in his element in the kitchen and the dining-room, and able to aid the chasse-café with a song lord alike of the carving-knife, the cocktail and the castanets.
