A party of peanut-harvesters are regaling themselves with stewed turnips and tough, underdone pieces of dried liver. They invite me to partake, handing me a pair of chopsticks and a bowl. Gangs of coolies, strung in Indian file along the paths, are met, carrying lacquer-ware from some interior town to Fat-shau and Canton.

Nothing could have been pleasanter than the attention I received here. Two foreign chairs were brought for my use, and half a dozen dishes of good food and clean chopsticks were set before me. The chief priest welcomed me, whose smiling face was good-nature itself.

On the teapoy on the left, were spread out Wen Wang tripods, spoons, chopsticks and scent-bottles. On the floor on the west side of the room, were four chairs in a row, all of which were covered with antimacassars, embroidered with silverish-red flowers, while below, at the feet of these chairs, stood four footstools.

Now, though this Wang was by no means a poor man, it made him very sad to spend money, and so people called him in sport, the Miser King, for Wang is the Chinese word for king. His greatest pleasure was to eat at some one else's table when he knew that the food would cost him nothing, and you may be sure that at such times he always licked his chopsticks clean.

Here they saw two additional bamboo tables, placed beyond the balustrade. On the one, were arranged cups, chopsticks and every article necessary for drinking wine. On the other, were laid bamboo utensils for tea, a tea-service and various cups and saucers. On the off side, two or three waiting-maids were engaged in fanning the stove to boil the water for tea.

The interpreter told him that all trees in America were like those in the pictures, and that we had many cataracts four or five miles high. To handle our food we had forks and chopsticks, and each guest had a small saucer of soy, or vinegar, at his right hand.

Here rice is kept in wooden bins all ready steaming hot for the use of travellers; good tea is brewed in a few minutes; the tables and chopsticks are sufficiently clean. Leaving the river, we crossed over the mountains by a short cut to the river again, and at a wayside inn, much frequented by Chinese, the chair stage finished. I wished to do some writing, and sat down at one of the tables.

They are brought up on a tray of red lacquer, in microscopic cups with covers, from Madame Prune's apartment, where they are cooked: a hashed sparrow, a stuffed prawn, seaweed with a sauce, a salt sweetmeat, a sugared chili. Chrysanthème tastes a little of all, with dainty pecks and the aid of her little chopsticks, raising the tips of her fingers with affected grace.

When solely used, however, it produces acrid humors, a fact which sufficiently accounts for the humorous character of the Kanakas. I think there must be as much of a knack in handling poi as there is in eating with chopsticks.
