Continuing my journey for many days, I came to the province of Casan, which is well inhabited, and one of the first countries in the world, for abundance of provisions, and commodities of all kinds, especially of chesnuts; and, is so extremely populous, that, on leaving the gates of any one city, we may always have the gates of another within sight.

They ate their bread not without due condiment of compagnatico, or even their chesnuts in the more remote and primitive mountain districts, drank their sound Tuscan wine from the generous big-bellied Tuscan flasks holding three good bottles, and sang their stornelli in cheerfulness of heart, and had no craving whatsoever for those few special liberties which were denied them.

And if it be in the Winter, then they long for juicy Pomgranates, new Wine upon the must, with Chesnuts; then for Colchester Oisters; then again for Pancakes and Fritters; and indeed for a thousand several sorts of such toys and fancies as do but appear before their longing imaginations.

While they are simmering, prepare artichoke bottoms cut in dice, and some chesnuts roasted, blanched, and cut in four: let your pheasants stew till your gravy is half wasted, then scum it very clean, and put in your chesnuts and artichoke bottoms; season with a little beaten mace, pepper, and salt, a small glass of white wine, and a little juice of lemon.

Lay the marrow in your pye, and the yolks of twelve hard eggs cut in halves, a handful of chesnuts boiled and blanched, and some candied orange-peel in slices. Lay butter on the top, and lid your pye. Let your caudle be white-wine, verjuice, some sack and sugar; thicken it with the yolks of eggs, and when the pye is baked, pour it in, and serve it hot. Scrape sugar on it.

Her father earned twenty sols a day as a labourer, and had a small pension from the Government, as a veteran and wounded soldier. Upon this little they seemed, according to her answers, to live very comfortably, not to say substantially. Poultry, chesnuts, milk, and dried fruit, formed their daily support. "We never buy meat," said she, "because we can raise more poultry than we can sell."

Hugh screamed with pleasure; and nobody thought it odd, for almost every boy was shouting. Hugh longed to pick up some of the shining brown chesnuts which he had seen yesterday in the road, under the trees; and he was now cantering away to the spot, when Phil ran after him, and roughly stopped him, saying he would get into a fine scrape for the first day, if he went out of bounds.

The laurels, maples, and deciduous-leaved oaks, hydrangea and cherry, were leafless, but the abundance of chesnuts and evergreen oaks, rhododendrons, Aucuba, Linonia, and other shrubs, kept the forest well clothed.

You must be informed then, that Gastripheres, who had taken a turn into the kitchen a little before dinner, to see how things went on observing a wicker-basket of fine chesnuts standing upon the dresser, had ordered that a hundred or two of them might be roasted and sent in, as soon as dinner was over Gastripheres inforcing his orders about them, that Didius, but Phutatorius especially, were particularly fond of 'em.

But if any of them were intended, by the Creator, for man, it is the chesnut; and this should be boiled. Boiled chesnuts are used as food, in many parts of southern Europe; and to a very considerable extent.
