Mix baking-powder with the flour and add to the squash; add milk and stir all together. Beat egg and stir in. Have hot fat in pan and drop fritters from spoon into pan. When browned on both sides remove to hot platter. Put one cup of water and one-quarter pound of butter on to boil. When it begins to boil stir in one-quarter pound of sifted flour.

"Yes," said her father, quite undisturbed, "that is what I meant, baking-powder. Now how much of it would you use?" "Well, about two teaspoonfuls," said Patty, feeling very important and housewifely. "Yes. Now suppose instead of two teaspoonfuls you put in two cupfuls." "Why then I wouldn't have any cake at all! I reckon it would rise right up the chimney and run down on the roof outside."

Products raised with baking-powder, for which our standard of lightness is different "quick breads" like biscuits and muffins and cakes do not require the gluten and can easily be made from substitute cereals. But for our ordinary loaf of bread, at least some wheat seems to be almost essential, though with skill in the making, rye can be made to serve in its place.

Make a custard of one-half cup of milk, with one cup of grated chocolate, one-half cup of granulated sugar; boil until thick, add the yolk of one egg, then remove from the fire; stir until cool, add this to the cake batter, add one and one-half cups of sifted flour, two teaspoons of baking-powder and one of vanilla flavoring.

Lest we forget, everything has been written down so that a wayfaring man, though a fool, need not err therein, baking-powder and coffee and a dozen eggs, and last and least, and under no circumstances to be forgotten, a cake of condensed yeast. These things weigh upon my spirits. The thought of that little yeastcake shuts out any disinterested view of the store.

Add one-half pound of dates, cut very fine, one teaspoon each of allspice and ground cinnamon, one-fourth pound of chocolate grated, juice and peel of one lemon, three and one-half soda crackers, rolled to a fine powder, one teaspoon of baking-powder, and last the stiff-beaten whites. Bake slowly. Cake can be cut in half and put together with jelly.

A clean glass bottle or smooth round stick may be used as rolling-pin, and the cutter can be a baking-powder can, or the biscuits may be cut square, or 4 inches long and 2 inches wide with a knife.

Romer had left in the house, and put them all in. Eggs and strawberry jam and raisins and apple-sauce, and some sliced bacon the way I had seen mother do with "egg pancakes." But though I seasoned it liberally with baking-powder to make it rise, it did not rise. It was dreadfully heavy and discouraging, and not even the strawberry jam had power to redeem it.

Cream one-quarter cup of butter with one cup of sugar, yolks of six eggs, one-quarter pound of raisins, one-quarter pound of currants, juice and peel of one lemon, one spoon of rum, twenty blanched and grated almonds, two cups of flour mixed with one-half teaspoon of baking-powder, two stiffly-beaten whites of eggs. Bake in an ungreased form one to one and one-half hours.

Take one-half cup of butter, three eggs, one and one-half cups of sugar, two and one-half cups of flour, two and one-half level teaspoons of baking-powder, and one-half cup of milk. One cup of any kind of nuts. Rub the butter and sugar to a light white cream; add the eggs beaten a little; then the flour sifted with the powder. Mix with the milk and nuts into a rather firm batter.
