The red-shouldered hawk is a handsome bird, with some very good traits, and is a common permanent resident. Unless hunted, these birds are not shy, and they remain mated throughout the year. Many a human pair might learn much from their affectionate and considerate treatment of each other. They do not trouble poultry-yards, and are fond of frogs, cray-fish, and even insects.
Dexter paid attention to the process, and felt that there was not much to learn: only to find out a hole the burrow of the cray-fish, and then thrust in his hand, and, if the little crustacean were at home, pull it out. The process was soon learned, but the temptation to begin was not great.
This shell-fish is to be found in almost all the Australian rivers and lagoons. It is in size and appearance very much like the little cray-fish or "Ecrevisses" which usually garnish the "Vol-au-vent" of Parisian cookery, and of very delicate flavor. This grass, so well known to all Australian travellers, is a certain indication of a sandy sterile country.

The drawing of "the UKODKO or smaller Murray cray-fish" most nearly resembles ASTACUS QUINQUE-CARINATUS, but it is three or four times larger than any of the specimens of that species which we possess, and the figure does not shew any indications of the five keels on the front of the head. In wanting the keel on the thorax it agrees with an Australian species described by Mr.
The exercise and the rising sun sent warmth and brighter thoughts into Dexter, so that he was better able to undertake the task of searching the holes for cray-fish when the boat was brought up under a suitable bank, and urged on by Bob he had to undress and take an unwilling bath, and a breakfast-hunt at the same time.
"I have spoken of this cray-fish as the SMALLER variety as respects the Murray. It is LARGER than the one found in the ponds of the river Torrens at Adelaide; but in the river Murray one is procured of a size ranging to 4 1/2 lbs., and which is QUITE EQUAL in flavour to the FINEST lobster."
I now had the delightful opportunity of once more breathing my native air, viewing beautiful Mount Edgcumbe, revelling in clotted cream and potted pilchards, tickling my palate—as Quin used to do—with John-dories, conger eels, star-gazey and squab pies, cray-fish, and sometimes, but not very often—for my purse was only half-flood in consequence of my expenses whilst on shore at the “Tap” at Sheerness—I had a drive upon Dock.
