We become almost hysterical over the prospect that the very fibre of the race is to be rotted by the adulteration of our food-supply, by oleomargarine in the butter, by boric acid in our canned meats, by glucose in our sugar, and aniline dyes in our candies, but forget that all these things represent extravagant luxuries unheard of upon the tables of any but the nobility until within the past two hundred, and in some cases, one hundred, years.
It would be venturesome to attempt to predict what the Supreme Court will do about it. Many constitutional lawyers seem to think that Congress has succeeded in its attempt and that the act will be sustained. Certainly there are strong precedents pointing that way. Three in particular will be relied upon the Veazie Bank case, the Oleomargarine case and the Narcotic Drug Act case.
Laws of a similar sort were aimed at oleomargarine when invented, but this probably not so much to protect the health of the people as the prosperity of the dairymen.
Samples of butter have occasionally been sent to this office that have turned white on the outside, and since the white part has a very disagreeable, tallowy flavor, people think that tallow or oleomargarine has been mixed with it, but we have never been able to find any foreign substance in any of the samples.
Various substitutes have recently come into use. These are all made from animal fat, chiefly that of beef, and are known as butterine, oleomargarine, and by other trade names. These preparations, if properly made, are wholesome, and may be useful substitutes for butter, from which they differ but little in composition. Garden Vegetables.
Butter don't stand any show there ain't any chance for competition. Butter's had its DAY and from this out, butter goes to the wall. There's more money in oleomargarine than why, you can't imagine the business we do. I've stopped in every town from Cincinnati to Natchez; and I've sent home big orders from every one of them.

The oil is now used in cooking, is mixed with olive oil, is sold pure for salad oil, and is an important constituent of oleomargarine, lard substitutes, and soap, to name only a few of the uses to which it is put.
