One day it'll be no water, and the next it'll be all he can drink; and one week he won't eat anything but vegetables, and the next he won't touch a thing but meat and is it fruit that goes with meat or cereals? Well, never mind. Whatever it is, he's done it. And lately he's taken to inspecting every bit of meat and groceries that comes into the house.

The lightness and richness of the alluvion of this volcanic soil is almost as suited to the production of cereals as to that of the vine and the olive or the growth of vegetables. But, even on the assumption that corn-growing would not pay, there was nothing to prevent, and everything to encourage the development of the olive plantation, the vineyard and the market garden throughout this region.

Cereals which have been "refined" of their husks present a highly starchy food, and unless they are properly balanced by base-forming substances, trouble is sure to follow. Alfred W. McCann describes the disaster to the Madeira-Mamore Railway Company in Brazil, when "four thousand men were literally starved to death on a white bread diet."

But this is not the only effect produced by cooking; besides making raw cereals digestible, cooking renders them palatable, destroys any bacteria or parasites that might be present, and, by means of its various methods, provides a variety of dishes that would otherwise be very much limited.

Most people would consider such a diet very limited, but it is easy to thrive on it, and it is not a tiresome one. There are so many varieties of fruits, nuts and cereals that it is easy to get variety. These foods do not become monotonous when taken in proper amounts. On such a diet it does not make much difference which meal is breakfast, lunch or dinner.

Let us assume that at last we also adopt the same standpoint, if not on principle, at least from a practical point of view. What are then the fundamental economic factors in the future relations of Central to Eastern Europe? Before the war Western and Central Europe drew from Russia a substantial part of their imported cereals. Without Russia the importing countries would have had to go short.
