Meeting of May 28th, 1860, M. Berthelot confirms the preceding experiment of Mitscherlich, and proves, moreover, that the soluble matter of which the author speaks may be precipitated with alcohol without losing its invertive power.

Was it not simply as a result of having read a note by the Russian chemist Mitscherlich on the comparison of the specific characteristics of certain crystals that Pasteur so enthusiastically took up his researches into molecular asymmetry which were the starting-point of so many wonderful discoveries?

"He is a learned man," said old Parson Emmons of Franklin, "who understands one subject, and he is a very learned man who understands two subjects." Schonbein says he has been studying oxygen for thirty years. Mitscherlich said it took fourteen years to establish a new fact in chemistry.

It is true that there are circumstances under which yeast brings about modifications in different substances. Doebereiner and, Mitscherlich, more especially, have shown that yeast imparts to water a soluble material, which liquefies cane-sugar and produces inversion in it by causing it to take up the elements of water, just as diastase behaves to starch or emulsin to amygdalin.

I was only twenty-four years of age when in Paris, whither I had gone with means given me by a friend; but was at last about to resign my studies from want of ability to meet my expenses. Professor Mitscherlich was then on a visit to Paris, and I had seen him in the morning, when he asked me what was the cause of my depressed feelings; and I told him that I had to go for I had nothing left.

It was also remarked that in the crystalline slags of furnaces augitic forms were frequent, the hornblendic entirely absent; hence it was conjectured that hornblende might be the result of slow, and augite of rapid cooling. This view was confirmed by the fact that Mitscherlich and Berthier were able to make augite artificially, but could never succeed in forming hornblende.

On the occasion of a communication on the inversion of cane-sugar by H. Rose, published in 1840, M. Mitscherlich observed: "The inversion of cane-sugar in alcoholic fermentation is not due to the globules of yeast, but to a soluble matter in the water with which they mix.

There was the beautiful Emma Baeyer, the daughter of General Baeyer, who afterward conducted the measuring of the meridian for central Europe; pretty, lively Anna Bisting; and Gretchen Bugler, a handsome, merry girl, who afterward married Paul Heyse and died young; Clara and Agnes Mitscherlich, the daughters of the celebrated chemist, the younger of whom was especially dear to my childish heart.

In the Memoir which we published, in 1860, on alcoholic fermentation, and in several subsequent works, we were led to a different conclusion on the causes of this very remarkable phenomenon from that which Liebig had adopted. The opinions of Mitscherlich and Berzelius had ceased to be tenable in the presence of the new facts which we had brought to light.
