The best part of the fish caught on this coast is sent post to Paris, in chasse-marines, by a company of contractors, like those of Hastings in Sussex. Nevertheless, we have excellent soles, skaite, flounders and whitings, and sometimes mackarel. The oysters are very large, coarse, and rank.
The evangelical trader awoke amid the general bustle of the house, and sought me out to talk over the sale of his mackarel. "Fa is tat," said Peter, who first stared wildly at him, and then put himself in a posture of defence. "Is she a deserter from the garishon of Halifax?" "Swear not, friend, it is an abomination, and becometh not a Christian man."
In the bays along the shore, the mackarel and bonita, the turtle, and, unfortunately, the sharks, are very numerous; while on the shelly beach, or the fissures of the rocks, are to be found lobsters, and crabs of various sorts.
When required, the top and bottom of the table may be furnished with game, fowls, rabbit; boiled fish, such as soles, mackarel, oysters, stewed or scalloped; French beans, cauliflower, or Jerusalem artichokes, in white sauce; brocoli with eggs, stewed spinach with eggs, sweetbreads, small birds, mushrooms, scalloped potatoes; cutlets, roast onions, salmagundi, buttered eggs on toast, cold neat's tongue, ham, collared things, sliced hunter's beef, buttered rusks with anchovies, grated hung beef with butter, with or without rusks; grated cheese round, and butter dressed in the middle of a plate; radishes the same, custards in glasses with sippets, oysters cold or pickled; potted meats, fish, birds, cheese; good plain cake sliced, pies of birds or fruit; lobsters, prawns, cray fish, any sweet things, and fruits.
The same sort of Fish come before the Mackarel in England. They are not so common as the Scate and Whip-Rays. They would not eat him, but gave him to me. They are much the size of Angel-Fish. They are blackish, and exactly like a Tench, except in the Back-fins, which have Prickles like a Pearch. They are as good, if not better than any Tench.
It is served with slices of broiled calves' liver, small rashers of bacon, and fried eggs. The latter on the herbs, and the other in a separate dish. This is the mode of dressing herbs in Staffordshire. FRIED MACKAREL. Stuff the fish with grated bread, minced parsley and lemon peel, pepper and salt, nutmeg, and the yolk of an egg, all mixed together. Serve with anchovy and fennel sauce.
The oldest thing I remember is Mackery End; or Mackarel End, as it is spelt, perhaps more properly, in some old maps of Hertfordshire; a farm-house, delightfully situated within a gentle walk from Wheathampstead. I can just remember having been there, on a visit to a great-aunt, when I was a child, under the care of Bridget; who, as I have said, is older than myself by some ten years.
The white kinds of fish, which contain neither fat nor oil, are preferable to the rest; such as whitings, turbot, soles, skate, haddock, flounders, smelts, trout, and graylings. These are easier of digestion than salmon, mackarel, eels, lampreys, herrings, or sprats, and therefore more wholesome.
MACKAREL. Their season is generally May, June, and July; but may sometimes be had at an earlier period. When green gooseberries are ready, their appearance may at all times be expected. They are so tender a fish that they carry and keep worse than any other: choose those that are firm and bright, and sweet scented.
Nay, when his most faithful curatolatress had offered to submit to him a design for an illumination for Christmas, he had escaped from her with a desperate and mysterious answer that he had nothing to do with illumination, he hoped it would be as sombre as possible. No wonder Avonmouth was astonished, and that guesses were not confined to Mackarel Lane.
