Men, dispersed among them, observe and imitate their industry, and thus rise to the instinct of beasts; with this advantage, that, whereas every species of beasts is confined to one peculiar instinct, man, who perhaps has not any that particularly belongs to him, appropriates to himself those of all other animals, and lives equally upon most of the different aliments, which they only divide among themselves; a circumstance which qualifies him to find his subsistence, with more ease than any of them.
The internal temperature in fever is above 100 degrees Fahrenheit, and it does not take long for food to decay in such temperature, especially such aliments as milk and broth, which are the favorite foods for fever patients. These alimentary substances are excellent for growing nearly all the germs that are found in the body in disease.
The objection that milk is indigestible is not borne out by the experience of those who give it under proper conditions. It is true that milk disagrees with a few, but so do such excellent foods as eggs, strawberries and Concord grapes, and many other aliments which are not difficult to digest. This is a matter of individual peculiarity.
From the middle of February to the beginning of April, in the midst of one of the severest winters ever known, his couch was in the snow. Frozen bread was his food for days together, and the absence of warm aliments brought him face to face with the terrible spectres of cold and hunger. The Urals were reached, and he began to climb their wooded heights.
But lest the aliments, which have their separate pipe, should slide into the windpipe I have been describing, there is a kind of valve that lies on the orifice of the organ of the voice, and playing like a drawbridge, lets the aliments freely pass through their proper channel, but never suffers the least particle or drop to fall into the slit of the windpipe.
The sensation of hunger ceases long before digestion takes place, or the chyme is converted into chyle. It ceases either by a nervous and tonic impression exerted by the aliments on the coats of the stomach; or, because the digestive apparatus is filled with substances that excite the mucous membranes to an abundant secretion of the gastric juice.
Our aliments are something like the stones which the gold-seekers of California reduce to powder in order to extract therefrom the hidden particles of gold they contain. The gold of our food is that portion of it which the blood is able to appropriate to his own advantage; the rest he rejects as refuse. And this explains why a small slice of meat nourishes you more than a whole plateful of salad.
In fine, the aliments modified after certain modes, in the room of nourishing, destroy the animal, and conduce to his ruin: the animal is preserved no longer than these substances are analogous to his system. They ruin him when they want that just equilibrium that renders them suitable to maintain his existence.
The other unhappy men had been so long without food, that they could not with impunity indulge in the simplest aliments that were given them. We, on the contrary, had no end to restrain ourselves; we could draw this air freely into our lungs, and it was the breeze, the breeze alone, that filled us with this keen enjoyment. "Ah!" said Conseil, "how delightful this oxygen is!
The numerous treatises upon digestion render it unnecessary to specify here the different aliments most proper for convalescents, suffice it to say, generally, that those meats in which azezome is found are the most nutritious.
