"EMPROTE" is a beautifully prepared proteid powder-food, more nourishing than meat and entirely free from all impurities. Its uses are almost innumerable, but the chief points are that it can be used without any preparation at all, if necessary, and that it has been proved, in thousands of instances, to be a perfectly adequate and very easily digested substitute for flesh-foods of all kinds.
An adult of average weight requires each day 125 grams of proteid or building material, 500 grams of carbohydrates, 50 grams of fat. This equals, in common parlance, one pound of bread, one-half pound of meat, one-quarter pound of fat, one pound of potatoes, one-half pint of milk, one-quarter pound of eggs, assuming that one egg equals two ounces, and one-eighth pound of cheese.
Plain white bread supplies more caloric, or energy, for the price than any other one food, and, with one or two exceptions, more proteid, or building material, than any other one food. One to one and a half fluid ounces of alcohol is about the amount which can be completely oxidized in the body in a day.
This is like saying that the nature of the seed is to remain enfolded within its shell, and it is only by some special miracle that it can be grown into a tree. But do we not know that the appearance of the seed contradicts its true nature? When you submit it to chemical analysis you may find in it carbon and proteid and a good many other things, but not the idea of a branching tree.
White fish, tender steak, or juicy joint and cutlet are superior to the oily fish, and kidney, liver, and heart. Milk, cheese, eggs, and butter are not open to these objections. Cheese is a food very rich in proteid. It requires careful chewing, and may with advantage be grated before use. Buttermilk is a valuable and strengthening food.
This introduces it quickly into the blood, and once there, it diffuses rapidly into the lymph and then into the cells. They must take it in excess of their needs, regardless of the effect, at least until the organs of excretion can throw off the surplus as waste. Compared with proteid, carbohydrates, or fats, alcohol is an unmanageable substance in the body.

And although "a little animal proteid, capable of pleasure and pain, surpasses in interest the whole immense creation of dead matter," he does not forget to show us the spectacle of life flowing through matter itself; and he animates even the simple elementary bodies, celebrating the marvellous activities of the air, the violence of Chlorine, the metamorphoses of Carbon, the miraculous bridals of Phosphorus, and "the splendours which accompany the birth of a drop of water."
As proteid is the chief constituent of protoplasm, it is regarded as the specific physical basis of life, and life is looked upon as the sum of its functions.
