The force of our consciousness, the correctness of our judgments, our tempers and our characters, the state of health of our minds, and also their troubles, their weaknesses, and even their existence, are all in a state of strict dependence on the condition of our bodies, more precisely with that of our nervous systems, or, more precisely still, with the state of those three pounds of proteid substance which each of us has at the back of his forehead, and which are called our brains.
Any stock not used should be emptied out of the stock pot, and boiled up afresh each day. The recipes following are intended to be used as substitutes for meat, fish, etc. I say "at a pinch" because if the nuts, cereals and pulses were ruled out of the dietary, it would, for most people, be deficient in fat and proteid.
And yet even dead protoplasm, and especially its most characteristic constituent, proteid, has been found the most difficult material in the world to analyze, and nobody as yet pretends to know its exact chemical make-up.
We should endeavour to cultivate an appetite for these vegetables containing proteid, as it is a great mistake to rely entirely for this element on meat, as so many of our race do. The animal products such as cheese, milk, and eggs will also form an efficient substitute for much flesh-food.
Much experimenting has been done with a view to determining these proportions, but the results so far are not entirely satisfactory. According to some of the older estimates, a person of average size requires for his daily use five ounces of proteid, two and one half ounces of fat, and fifteen ounces of carbohydrate.
Wheat contains only 3 per cent. more proteid than corn. The man who substitutes wheat at one and one-half cents a pound for corn worth one cent a pound pays 17 cents a pound for his added protein. In beef scrap he could get the protein for 5 cents a pound and have a very superior article besides. Milk as a source of protein ranks between the vegetable proteids and those of meat.
The serum is almost entirely free from corpuscles, these being entangled in the fibrin. This clotting of the blood is due to the formation in the blood, after it is withdrawn from the living body, of a substance called fibrin. It is made up of a network of fine white threads, running in every direction through the plasma, and is a proteid substance.
On the one hand is a sensation of displacement, of movement, of a dance executed by the molecules of some proteid substance; on the other hand is a flock of sheep passing over the plain at a distance of a hundred metres away. It seems to me that here also the argument advanced is not sound.
Nuts also are rich in proteid and in fat; they require, however, careful mastication. Mills can be purchased cheaply for grinding nuts; the ground meal, either alone or made into a cream, forms a delicious adjunct to stewed fruit. Green vegetables are a much neglected food. The salts they contain are very useful. They require careful cooking.
