These appear to be produced by micro-organisms of different sorts. During the fermentation which follows the drying the producer has to contend with micro-organisms that are troublesome to him; for unless the phenomena are properly regulated the fermentation that occurs produces effects upon the tobacco which ruin its character.

On the twelfth of March, 1878, Dr. Hervieux was good enough to admit me to his service in the Maternity to visit a woman delivered some days before and seriously ill with puerperal fever. The lochia were extremely fetid. I found them full of micro-organisms of many kinds. The culture remained sterile during the following days.

A considerable proportion of people with decayed teeth have also suppuration about the margins of the gums and around the roots of the teeth. This pyorrhoea alveolaris, as it is called, constitutes a very great danger to the patient's health, the purulent discharge teems with poisonous micro-organisms, which being constantly swallowed are apt to give rise to septic disease in various organs.

Now, in the blood, as it courses through our bodies, are myriads of little vessels called corpuscles; these are what give the blood a red color. There are also a smaller number of white corpuscles, that are known as phagocytes, whose mission is to destroy micro-organisms that are prejudicial to life.

Likewise, vegetables without skins decay faster than those with skins, because they have no protective covering and contain more water, in which, as is definitely known, most micro-organisms thrive. If food is to be kept from decaying, the housewife must endeavor to prevent the growth of micro-organisms, and she can best accomplish this if she is familiar with the ways in which they work.

That all diseases originating in the alimentary canal are due to infection there can be no doubt, and all agree, but I do not agree with the prevailing opinion that germs or micro-organisms are the primary cause of infection, for that theory is not sufficient; it can not possibly cover the ground and account for everything that takes a part in the great array of causations that must be considered.

They will experiment the watering of the soil with cultures of micro-organisms a rational idea, conceived but yesterday, which will permit us to give to the soil those little living beings, necessary to feed the rootlets, to decompose and assimilate the component parts of the soil. They will experiment.... But let us stop here, or we shall enter into the realm of fancy.

Boiled or natural milk is then as bad as any other food, and worse than most, for in the absence of digestive power it soon becomes a foul mass, swarming with billions of bacteria. The system is compelled to absorb some of the poisons given off by the micro-organisms and the results are disastrous.

On the other hand, the formation of new bone may be exaggerated, the osteoblasts being excited to abnormal activity by stimuli of different kinds: for example, the secretion of certain glandular organs, such as the pituitary and thyreoid; the diluted toxins of certain micro-organisms, such as the staphylococcus aureus and the spirochæte of syphilis; a condition of hyperæmia, such as that produced artificially by the application of a Bier's bandage or that which accompanies a chronic leg-ulcer.

With these causes understood, the methods of caring for foods will be better appreciated, and the results in buying, storing, and handling foods will be more satisfactory. To come to a knowledge of why foods spoil, it will be well to note that nature abounds in micro-organisms, or living things so minute as to be invisible to the naked eye.
