Stand aside, and make way for this reverend gentleman; he is a prediger, a preacher of the gospel; he is habited in a black gown, black silk stockings and shoes, a small black velvet skull-cap on his head, while round his neck bristles a double plaited frill, white as a curd, and stiff as block tin. You would take him for the Dutch nobleman in an old panel painting.
On the last page of the album, instead of verses, there were various recipes for remedies against stomach troubles, spasms, and worms. The Subotchevs dined exactly at twelve o'clock and only ate old-fashioned dishes: curd fritters, pickled cabbage, soups, fruit jellies, minced chicken with saffron, stews, custards, and honey.
Brinnaria felt all her wild self surge up in her. "I'm sound as a two-year-old racing filly," she replied. "I'm clean as fresh curd; I hear you perfectly and you can hear me perfectly." Bambilio bristled like a bantam rooster. "That is not the way for a Vestal to speak," he rebuked. "I'm not a Vestal yet," Brinnaria retorted, "and that was my answer to those questions.
Venders were everywhere, many with hot rice and bean curd. Street cleaners in bright-red cotton jackets were busy with the mud puddles. The river swarmed with sampans and barges and launches. There was only one lifeless thing in all Shanghai that morning the German Club. In the city hospital the man Morrissy, his head in bandages, smiled feebly into Cunningham's face.
STILTON CHEESE. This rich and relishing article is made in the following manner. The night's cream is put into the morning's milk, with the rennet. When the curd is come, it is not broken, as is usually done with other cheese, but taken out whole, and put into a sieve to drain.
Boil a pint of milk, and the same of water, with an ounce and a half of bruised mustard seed, until the curd separates when strain the whey. This is a most desirable way of administering mustard; it warms and invigorates the system, promotes the different secretions, and in the low state of nervous fevers, will often supply the place of wine.
M'Iver was too busy for a time upon the sudden rupture with Argile to pay very much heed to my defence of Master Gordon. The quarrel to call that a quarrel in which one man had all the bad temper and the other nothing but self-reproach had soured him of a sudden as thunder turns the morning's cream to curd before noon. And his whole demeanour revealed a totally new man.
This sour curd, which they call gryut, when wanted for use in winter when they have no milk, is put into a bag with hot water, and by dilligent beating and agitation, is dissolved into a sour white liquor, which they drink instead of milk; for they have a great aversion to drink water by itself. Of the Beasts they eat, of their Garments, and of their Hunting parties.
The great aim is not to produce size only, "but the fine, white, creamy color, compactness, and what is technically called curdy appearance, from its resemblance to the curd of milk in its preparation for cheese. When the flower begins to open, or when it is of a warty or frost-like appearance, it is less esteemed. It should not be cut in summer above a day before it is used."
Place milk in a test tube, add a drop or two of commercial rennet, and place the tube in a water-bath at about 100 degrees F. The milk becomes solid in a few minutes, forming a curd, and by and by the curd of casein contracts, and presses out a fluid, the whey. Experiment 71. Repeat the experiment, but previously boil the rennet.
