About ten acres of ground close to the house have been reserved and are called "the garden," in which have been planted turnips, flax, beet-root, lettuce, tomatoes, and potatoes; in short, all the luxuries of the season. But I am afraid none will be ready before we leave, if we carry out our idea of going to Colorado early in August.
A queasy odor of drainage stole up from the waters of the dock, and mixed with the rank, gross sweetness of the bags of beet-root sugar from the freight-steamers; there was a coming and going of carts and trucks on the wharf, and on the ship a rattling of chains and a clucking of pulleys, with sudden outbreaks and then sudden silences of trampling sea-boots.
The most beautiful white sugar is now manufactured from the beet-root, in the place of the treacle-like sugar, having the taste of the root, which was first obtained; and instead of 3 or 4 per cent., the proportion obtained by Achard, double or even treble that amount is now produced.
Make each pancake large enough to cover the bottom of a dessert plate; greasing the pan every time. Send them to table hot, accompanied by powdered sugar and nutmeg mixed in a small glass bowl. Have wine with them also. Take a large red beet-root that has been boiled tender; cut it up and pound it in a mortar till you have sufficient juice for colouring the pancakes.
As you dip every piece of Beet-Root in this Batter, strew them over thick with fine Flower mix'd with grated Bread, and Parsley shred small, and then fry them in Lard: when they are enough, let them dry, and serve them with a Garnish of Lemmon. These likewise may be put about stew'd Carps, Tench, or roasted Jacks, by way of Garnish, with scraped Horse-Radish, and pickled Barberries.
Nowadays, we get sugar from cane and beet-root in abundance, while sugar-maples and palm-trees of various sorts afford a considerable supply to remoter countries. But the childhood of the little Greeks and Romans must have been absolutely unlighted by a single ray of joy from chocolate creams or Everton toffee.
Have some red beet-root boiled before it is cut into shapes. Use equal quantities of each vegetable. Arrange them with peas in the centre, and the others in circles round, studying the effect of color; then dress, but do not mask, them with green mayonnaise.
He recalled the small eighteenth-century house, the "château" of the village, built on the French model, with its high mansarde roof; the shabby stateliness of its architecture matching plaintively with the field of beet-root that grew up to its very walls; around it the flat, rich fields, with their thin lines of poplars; the slow, canalized streams; the unlovely farms and cottages; the mire of the lanes; and, shrouding all, a hot autumn mist sweeping slowly through the damp meadows and blotting all cheerfulness from the sun.
Then it swerved across a deep rut, stopped, pursued again its easy course, changed its direction, stopped anew, disturbed, spying out every danger, undecided as to the route it should take; when suddenly it began to run with great bounds of the hind legs, disappearing finally, in a large patch of beet-root. All the men had woke up to watch the course of the beast.
