My memory of that tea is not pleasant; it had been left a whole night in contact with its leaves, and smacked strongly of tannin. The snow-water, moreover, with which we diluted it was not pure, but left a black residuum at the bottom of the dishes in which the beverage was served.

In some cases the lime soaps act like mordants, attracting colouring matter unequally, and producing patchy effects. In the dye-baths in which catechu and tannin are used, there is a waste of these matters, for insoluble compounds are formed with the lime, and the catechu and tannin are, to a certain extent, precipitated and lost.
Tannin is the third important element of the tea leaf, and it varies greatly in percentage in different teas, and increases with the age of the growing leaf. It is the cause of the rasping, puckering, astringent effect upon the tongue and interior of the mouth.
Perhaps this is because there is considerable of the astringent tannin in the tea leaves. Chocolate is a valuable food. Those who eat of other aliments in moderation may partake of chocolate without harm, but if chocolate is used in addition to an excess of other food, the results are bad. The chocolate is so rich that it soon overburdens some of the organs of digestion, especially the liver.
There is no deception about it: it tastes of tannin and spruce and creosote. Everything, in short, has the flavor of the wilderness and a free life. It is idyllic. And yet, with all our sentimentality, there is nothing feeble about the cooking.
