New oak casks are fatal from the tannin which soaks out; fir casks are safe and good. So delicate and sensitive are the minute creatures which people the sea, that they have been found dead on opening a cask in which a new oak bung was the only source of poison.

The artist would then have to take with him nothing but his camera and his dry sensitive plates. After exposing these in the camera, they would be kept in dark boxes until he was ready to develop them at leisure on returning to his atelier. Many "dry methods" have been contrived, of which the tannin process is in most favor.

The infusion in warm water had a brown colour and an astringent taste. It contained a mixture of extractive matter and tannin. The rhizophora, the mistletoe, the cornel-tree, in short, all the plants which belong to the natural families of the lorantheous and the caprifoliaceous plants, have the same properties.

There is no deception about it: it tastes of tannin and spruce and creosote. Everything, in short, has the flavor of the wilderness and a free life. It is idyllic. And yet, with all our sentimentality, there is nothing feeble about the cooking.

Now if that letter were steamed open the tannin and the sulphate would come together, run, and leave a smudge. You see the blots? The inference is obvious." Clearly, then, our chase was getting warmer. Dawson had been in Atlantic City at least within a few days.

The refuse of tanneries such as the ears of oxen and calves are better articles. Animal skins also, in any form, uncombined with tannin, may be worked into glue. Ox-tallow is of great importance in the arts. Candles and soap are made of it, and it enters largely into the dressing of leather and the use of machinery. Large quantities are annually exported from Russia.

"There it is; that's Injun tan, an' I hope you see that elbow grease is the main thing in tannin'." "Now, will you show us how to make moccasins and war-shirts?" asked Little Beaver, with his usual enthusiasm. "Well, the moccasins is easy, but I won't promise about the war-shirts.

Of the many varieties, Mocha and Java are finest in flavor, and a mixture of one-third Mocha with two-thirds Java gives the drink at its best. As in tea, there are three chief constituents: A volatile oil, giving the aroma it possesses, but less in amount than that in tea. Astringent matter, a modification of tannin, but also less than in tea.

It may be noted, however, that the bad effects of alcoholic beverages upon the stomach, the liver, and the body in general are less pronounced when these are taken as a part of the regular meals. *Effects of Tea and Coffee.*—In addition to the stimulating agent caffeine, tea and coffee contain a bitter, astringent substance, known as tannin.

Even where too prolonged steeping has greatly increased the usual proportion of tannin in tea infusion, milk, when added, neutralizes the coagulating power of the tannin entirely or to such degree as to render it harmless. Professor Johnston thinks it quite probable that tannin takes some part in the exhilarating effect of tea, and in that of the betel-nut of the East.
