With the thermometer ranging from 60 to 70 degrees F. below zero, there was a persistent craving for strong animal diet, especially fatty foods. The intense cold makes such a drain upon the heat-producing power of the body that only food containing the largest proportion of carbon is capable of making up for the loss.

The division of food into azotized and non-azotized is no doubt important, but the attempt to show that the first only is plastic or nutritive, while the second is simply calorifacient, or heat-producing, fails entirely in the face of the facts revealed by the study of man in different climates, and of numerous experiments in the feeding of animals.

It is fashionable and customary to use superfine flour bread; and as a physician, and an employer of men, I know how difficult it is to induce or persuade fathers and mothers, even for the sake of their children, to use Graham or unbolted flour bread, cakes, and puddings, which will give nourishment to the brain, muscles, teeth and bones, and all the fat and heat-producing material they need, instead of superfine white flour bread, cakes, and puddings, which give comparatively little more than fat and heat-producing material.

Liebig, the celebrated writer on animal chemistry, having found that both sugar and alcohol were heat-producing articles of food, framed a theory that alcohol is burnt in the lungs, giving off carbonic acid and water, and thus serving to warm the body.

Does it mean more than this, that we, in a temperate climate inclining to cold, need more elaborate houses and more heat-producing food than nations who live in warmer climates? Are not the nations who live in warmer climates less attached to material things simply because they are less important?" "There is something in that, no doubt," said Father Payne.

One’s capacity for producing heat may be so low that he is unable to respond to a sudden demand for heat, as in going from a warm room into a cold one. As a consequence, the body is unable to protect itself against unavoidable exposures. Impairment of the heat-producing capacity is brought about in many ways. Several diseases do this directly, or indirectly, to quite an extent.

Thus, in a keen and long-continued winter, the most condensed forms of carbonaceous foods will be needed; while in summer a small portion of nitrogenous food to nourish muscle, and a large amount of cooling fruits and vegetables, are indicated; both of these, though more or less carbonaceous in character, containing so much water as to neutralize any heat-producing effects.

According to Starling, when the connection between the brain and the muscles of an animal is severed by curare, by anesthetics, by the division of the cord and nerves, then the heat-producing power of the animal so modified is on a level with that of cold-blooded animals. With cold the temperature falls, with heat it rises.

Possibly the idea was, that since comets are supposed to cause great heats, great heats may be supposed to indicate a comet somewhere; and with minds thus prepared, it was not wonderful, perhaps, that telescopic glare, or an imperfect view of our old friends the Pleiades, should have been mistaken for a vision of the heat-producing comet.

If factory owners who use steam power could realize that the gases, the highest heat-producing part of the coal, escape with the smoke, and that by using smoke consumers they not only prevent all the evils of the smoke nuisance but save fully half of the value of their coal, they would gladly put in this equipment.
