Once in the stomach, chewed food has to be churned in order to mix it with hydrochloric acid, pepsin, and other digestive enzymes. Manufacturing these enzymes is also considerable work! Churning is even harder work than chewing but normally, people are unaware of its happening.

Substances known as drugs, which may be used as medicines in disease, should be avoided in health. Before foods can be passed into the body proper, they must be converted into the liquid form, or dissolved. In this process, known as digestion, water is the solvent; and certain chemical agents, called enzymes, convert the insoluble nutrients into substances that are soluble in water.

How is the rate of supply of food to the cells regulated? Why is the body unable to regulate the supply of alcohol to the cells when this substance is taken? What becomes of the alcohol if this is taken in any but very small quantities? State the general purpose of enzymes in the body. Name the enzymes found in each of the digestive fluids. What ones are found in the tissues?

The general plan of digestion is that of passing the food through the canal, beginning with the mouth, and of acting on it at various places, with the final result of reducing most of it to the liquid state. The digestive fluids supply water which acts as a solvent and carries the active chemical agents, or enzymes, that convert the insoluble foods into substances that are soluble.

Orders and suborders of enzymes, they play a part in respiration, in digestion, in assimilation. Some act on the fats, some on the carbohydrates, some produce inversion, others dissolution and precipitation. These enzymes are at once the products and the agents of life.

Remember, the pancreas has another major service to perform for the body: secreting digestive enzymes to aid in the digestion of proteins. When the diet contains either too much protein or too much sugar and/or high-glycemic index starch foods, the overworked pancreas begins to be less and less efficient at maintaining both of these functions.
