Hence, from this point of view, the difference between animals and plants consists in this; that, in the latter, the contractile substance, as a primordial utricle, is enclosed within an inert cellulose membrane, which permits it only to exhibit an internal motion, expressed by the phenomena of rotation and circulation, while, in the former, it is not so enclosed.
The membrane of cellulose, in which the protoplasm wraps itself up, not only prevents the simplest vegetable organism from moving, but screens it also, in some measure, from those outer stimuli which act on the sensibility of the animal as irritants and prevent it from going to sleep. The plant is therefore unconscious. Here again, however, we must beware of radical distinctions.
Now the substance of the cotton, linen or flax, as well as that of the cotton-silk fibres, is termed, chemically, cellulose. Raw cotton consists of cellulose with about 5 per cent. of impurities. This cellulose is a chemical compound of carbon, hydrogen, and oxygen, and, according to the relative proportions of these constituents, it has had the chemical formula C H O assigned to it.
The name of Chlamydomonas is applied to certain microscopic green bodies, each of which consists of a protoplasmic central substance invested by a structureless sac. The latter contains cellulose, as in ordinary plants; and the chlorophyll which gives the green colour enables the Chlamydomonas to decompose carbonic acid and fix carbon as they do.
This forms a protection to the rest of the grain, but it cannot be used as food, because it is composed almost entirely of cellulose, which is practically indigestible. The center of the grain, or the heart, is the softest part and consists of cells filled with starch.
The cellulose is, in a pure state, a white powder, of specific gravity 1·5, i.e. one and a half times as heavy as water, and is quite insoluble in such solvents as water, alcohol, ether; but it does dissolve in a solution of hydrated oxide of copper in ammonia. On adding acids to the cupric-ammonium solution, the cellulose is reprecipitated in the form of a gelatinous mass.
Tartaric acid is such a substance; and if a single spore of the commonest and most troublesome of moulds Penicillium be sown in a saucerful of water, in which tartrate of ammonia, with a small percentage of phosphates and sulphates is contained, and kept warm, whether in the dark or exposed to light, it will, in a short time, give rise to a thick crust of mould, which contains many million times the weight of the original spore, in protein compounds and cellulose.
The first includes those substances analogous in composition to sugar, being chemically composed of hydrogen, carbon, and oxygen. Such are starch, gum, cellulose, and so forth, which are almost identical in their ultimate composition, and admit of ready conversion into sugar by a simple process of vital chemistry.
An animal may be defined as a living organism, the protoplasm of which does not secrete a cellulose cell-wall, and which requires for its existence proteid material obtained from the living or dead bodies of existing plants or animals. The common use of the word animal as the equivalent of mammal, as opposed to bird or reptile or fish, is erroneous.
