In addition to the agricultural training which we give to young men, and the training given to our girls in all the usual domestic employments, we now train a number of girls in agriculture each year. These girls are taught gardening, fruit-growing, dairying, bee-culture, and poultry-raising.

I have been to two such meetings in Virginia, but they are devoted to fruit and truck and dairying, and no one seems to know much about our soils. I appreciate more and more every year the absolute knowledge you helped me to secure concerning Westover, where we had been working in the dark for two centuries.

In a region interested mainly in dairying a co-operative creamery can be made very profitable; in grain-producing sections co-operative elevator service makes possible the storage of grain until the demand increases values; in fruit-raising regions co-operation in selling has made the difference between success and failure.

Among the dairying fraternity little toddlers, ere they are big enough to hold a bucket, learn to milk. Thus their hands become inured to the motion, and it does not affect them. With us it was different. Being almost full grown when we started to milk, and then plunging heavily into the exercise, it had a painful effect upon us.

A little later, she broached her plan. She believed in intensive dairying as well as intensive farming, and intended, as soon as the lease expired, to establish a Jersey dairy on the other ten acres. This, like everything she had done, would be model, and it meant that she would require more help. Billy and Saxon were just the two.

Leaving out of account large towns, where our problem is, as I have said, the same as that which confronts the industrial classes in the manufacturing centres of Great Britain, we are chiefly concerned with the application of science to the cultivation of the soil and the improvement of live stock, and of business principles to the commercial side of farming; with the teaching of dairying, horticulture, apiculture, and what has been called farm-yard lore, outside the rural home, and with domestic economy inside.

The Census figures which report one-fifth of all women gainfully employed as engaged in agriculture and animal husbandry are somewhat startling until we observe that southern negro women make up a very large number of the farm workers reported. Even aside from these, however, there are many women who are finding work in gardening, poultry raising, bee culture, dairying, and the like.

In the fall of 1826 he bought a cow and a couple of two-year old heifers, and the following spring there was enough milk to enable the mistress to make a few cheese. These gave the farm a reputation which established a steady demand at a paying price. More cows were got, no grain was sold, everything was fed, and the master, with the help of the mistress, led in dairying.

We can pasture the corn stalks during the fall and winter when the ground is in suitable condition. We plan to raise our own horses and perhaps some to sell. In addition we may raise a few dairy cows for market, but will do little dairying ourselves. We expect to sell wheat and some corn, and if successful we shall sell some soy beans, alsike seed, and red clover seed.

Dairying and large orchards on land suitable and not of use in the general farming plan could be conducted by the community, each farmer being a stockholder. The labor performed on these cooperative undertakings should be paid for and charged to cost of production, each one who performs a share of the labor participating in the profits as near as may be.
